Description

An Instant Pot dinner with seasoned ground beef, tender potatoes, smoky bacon, ranch mix and melty cheddar for an easy one-pot meal.


Ingredients

Scale
  • 16 oz lean ground beef
  • 2 Tbsp dried onion flakes (or 1/2 cup fresh chopped onion)
  • 3 Tbsp dry ranch dressing mix, divided
  • 1 cup beef or chicken broth
  • 28 oz russet potatoes, peeled and cut into 1 inch cubes
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 (4 oz) can diced green chiles
  • 4 slices of bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in 1 Tbsp of ranch dressing mix. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the potatoes, remaining 2 Tbsp of ranch dressing mix, chili powder, cumin and green chiles. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Gently stir in the bacon and cheddar. 
  6. Serve and enjoy!
