The Best Bacon Cheeseburger Soup
The weather is heating up here but I don’t want to say goodbye to soup season just yet! This soup gives me cheeseburger vibes and was loved by my family. Skyler and Greg love add in a bit of pickle juice into their bowls. Shred your own cheese so it melts smoother, and don’t skip tempering the half and half so it stays nice and creamy instead of curdling. Trust me, this is one you’ll want to make again and again!
Ingredients/Substitution Ideas
- Ground beef–or ground turkey
- Onion–or shallot
- Paprika
- Garlic powder–or 1 Tbsp minced garlic
- Kosher salt
- Black pepper
- Dried basil–or Italian seasoning
- Dried parsley–or fresh parsley
- Tomato paste–or ketchup
- Chicken broth–or beef broth
- Carrot
- Yukon gold potatoes–or peeled russet potatoes
- Half and half–or milk, evaporated milk or cream
- Cornstarch
- Bacon crumbles–or cooked chopped bacon
- Cheddar cheese–or Colby Jack
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Cook until no longer pink. Drain off excess grease. Stir in the paprika, garlic powder, salt, pepper, basil, parsley and tomato paste.

Pour in the broth and scrape bottom of pot so that nothing is sticking.

Dump in the carrot and potatoes.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting.

Stir a cup of hot soup into the half and half then stir the mixture into the pot.

Stir cornstarch together with 3 Tbsp of cold water, until smooth. Turn Instant Pot to saute setting. Stir the mixture into the pot to thicken the soup. Once thickened, turn off pot.

Stir in the bacon and cheddar.


Ladle into bowls and serve. If desired, top with diced pickles and tomatoes.

Notes/Tips
- Serve with crusty bread and a green salad.
- This recipe is gluten free.
- Shred cheddar right off the block for best, creamiest results.
- Top with diced pickles and tomatoes for more cheeseburger vibes.
- I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze it, but note the texture may change slightly because of the dairy. Freeze before adding the half and half for best results.

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Cook until no longer pink. Drain off excess grease. Stir in the paprika, garlic powder, salt, pepper, basil, parsley and tomato paste. Transfer to slow cooker.
- Stir in the broth, carrots and potatoes.
- Cover slow cooker and cook on low for 4 hours.
- Stir cornstarch together with 3 Tbsp of cold water, until smooth. Stir the mixture into the slow cooker and let thicken for about 10 minutes on the high setting.
- Stir a cup of hot soup in with the half and half. Stir the half and half into the slow cooker.
- Stir in the bacon and cheddar.
- Ladle into bowls and serve. If desired, top with diced pickles and tomatoes.

I make most of your recipes in the instant pot, but would like to try this one in a crockpot. What size crockpot would be best?
