Tuscan Sausage Potato Soup–this easy Instant Pot or slow cooker sausage and potato soup combines smoky beef sausage, tender potatoes and spinach in a creamy, flavorful broth that’s ready in under 30 minutes.

Tuscan Sausage Potato Soup

This easy soup can be made in your Instant Pot or slow cooker. The smoky sausage infuses the entire pot with incredible flavor requiring few total ingredients. It’s kind of like zuppa toscana with smoked sausage instead of italian sausage. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil–or vegetable, canola
  • Beef smoked sausage–or turkey smoked sausage or kielbasa
  • Onion–or shallot
  • Chicken broth–or water and Better Than Bouillon chicken base
  • Italian seasoning
  • Red pepper flakes–or black pepper
  • Garlic powder–or 1 Tbsp fresh minced garlic
  • Russet potatoes–or Yukon gold potatoes, red potatoes
  • Half and half–or heavy cream or whole milk
  • Spinach–or kale
  • Salt–to taste

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown. Add in the onions and saute for 3 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Keep the Instant Pot on the saute setting so the broth can start heating up while you gather the other ingredients.

Add in the Italian seasoning, red pepper, garlic powder and potatoes. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Temper the half and half by stirring a cup of hot broth into it. Stir the mixture into the pot. Stir in the spinach. Taste test and add salt, if needed.

Ladle into bowls and serve.

Notes/Tips

  • Serve with crusty bread, garlic toast or biscuits.
  • This recipe is gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3, 4 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze it, but cream-based soups are best frozen before adding the dairy.

Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage
  • 1/2 cup finely diced onion
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes
  • 1 tsp garlic powder
  • 1 1/2 pounds russet potatoes, peeled and cut into 1/2 inch cubes
  • 1/2 cup half and half or heavy cream
  • 1 cup chopped spinach or kale
  • Salt, to taste

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown. Add in the onions and saute for 3 minutes. Transfer to the slow cooker.
  2. Stir in the broth, Italian seasoning, red pepper, garlic powder and potatoes. 
  3. Cover and cook on low for 3-4 hours.
  4. Temper the half and half by stirring a cup of hot broth into it. Stir the mixture into the slow cooker. Stir in the spinach. Taste test and add salt, if needed.
  5. Ladle into bowls and serve.
