Cheesy Ground Beef and Rice Casserole—an easy one-pot dinner made with seasoned ground beef, mushrooms, carrots and rice cooked together in the Instant Pot, then finished with cream cheese, cream, and a generous sprinkle of parmesan.

Cheesy Ground Beef and Rice Casserole
This easy homey ground beef and rice dinner tastes great and I usually have all the ingredients to make it too which is a win. We ate it as an easy Sunday supper and served it alongside raw veggies and dip. Greg grabbed the leftovers to bring to work for a warm lunch.
Ingredients/Substitution Ideas
- Lean Ground Beef–or ground turkey
- Chopped Mushrooms–or canned mushrooms
- Onion Powder–or 2 Tbsp dried minced onion, or a half cup of diced onion
- Kosher Salt
- Black Pepper
- Garlic Powder
- Dried Rosemary
- Dried Thyme
- Beef Broth–or chicken broth, or water and Better than Bouillon
- Converted Rice–or long-grain white rice
- Carrots–or baby carrots
- Cream Cheese–or Boursin
- Heavy Cream–or half-and-half
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the mushrooms, onion powder, salt, pepper, garlic powder, rosemary and thyme. Brown for about 5 minutes.


Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice. Place carrots and cream cheese on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes then move valve to venting. Remove the lid.

Gently stir in the cream. Salt and pepper to taste. Scoop onto plates and top with a generous portion of parmesan cheese.



Notes/Tips
- Serve with roasted vegetables like broccoli or green beans.
- This recipe is gluten free.
- I used my 6 quart Instant Pot*. You can also make this in a 3, 4 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 4 oz chopped mushrooms
