This easy Instant Pot dinner has ground beef, chili beans, Rotel tomatoes, corn, rice and melty cheddar. It’s a Tex-Mex-style bowl that gets finished off with crunchy Chili Cheese Fritos and a dollop of sour cream.

Netflix and Chill Casserole

This is exactly the kind of dinner you want when you’re curled up on the couch in comfy clothes, ready to hit play on your favorite show. Those Chili Cheese Fritos on top are what dreams are made of! It’s almost as easy to make as it is to order food from Door Dash. The chili beans add so much flavor so make sure to dump in the whole can. Double it if you’ve got a hungry crew because everyone’s going to want seconds.

Ingredients/Substitution Ideas

  • Lean Ground Beef–or ground turkey
  • Diced Onion–yellow or white
  • Garlic Powder
  • Kosher Salt
  • Black Pepper
  • Beef Broth–or water and Better than Bouillon
  • Converted Rice–or long grain white
  • Cumin
  • Chili Powder
  • Chili Beans
  • Rotel Diced Tomatoes with Green Chiles–I used mild
  • Worcestershire Sauce
  • Brown Sugar
  • Frozen Sweet Corn–or canned corn
  • Shredded Cheddar Cheese–I used sharp. You can also use monterey jack or pepper jack.
  • Chili Cheese Fritos–or regular Fritos
  • Diced Green Onions
  • Sour Cream–or crema

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions and brown for 5 minutes. Drain off excess grease. Stir in the garlic powder, salt and pepper. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice, cumin and chili powder. Dump chili beans, Rotel, worcestershire, brown sugar and corn into the pot. Don’t stir. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook time to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 

Stir in the cheese. 

Scoop into bowls and top with Fritos, diced onions and sour cream.

Notes/Tips

  • Top with avocado slices, diced tomatoes or pickled jalapeños (I like the tame jalapenos) for more color and texture.
  • Chili beans are typically pinto or kidney beans that come pre-seasoned in a mild, flavorful chili sauce made with spices like chili powder, cumin, garlic, and onion. They’re designed to be an easy shortcut for making chili or Tex-Mex–style dishes. You’ll usually find them in the canned bean aisle of the grocery store, right next to the black beans, pinto beans, and refried beans.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
  • Double it for a crowd or meal prep.
  • You can make this gluten free. Just make sure to use a gluten-free Worcestershire sauce and check your Fritos. The Chili Cheese flavor contains gluten, so choose plain Fritos.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 8 oz lean ground beef
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • 3/4 cup converted rice
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 (14.5 oz) can chili beans
  • 1 (10 oz) can Rotel diced tomatoes with green chiles
  • 1 tsp Worcestershire sauce
  • 1 tsp brown sugar
  • 1/2 cup frozen sweet corn
  • 1/2 cup shredded cheddar cheese
  • Chili Cheese Fritos
  • Diced green onions
  • Sour cream

    I accidentally deleted the recent recipe for Chicken enchiladas. A deconstructed version where the corn tortillas were torn up rather than rolled. I think it was made Pot in Pot and had a reference to the Fat Daddios’ 6-inch pot. I think it was 3 or 4 inches tall. And I don’t remember the exact name of the recipe.
    Last night we made the ground meat with cabbage soup recipe. MARVELOUS!! (again, I forget the exact name). A keeper that we printed out so we don’t lose. Thank you for working so hard for us so we can make wonderful meals for our loved ones.
