Description

An easy one-pot dinner made with seasoned ground beef, mushrooms, carrots and rice cooked together in the Instant Pot, then finished with cream cheese, cream, and a generous sprinkle of parmesan.


Ingredients

  • 16 oz lean ground beef
  • 4 oz chopped mushrooms
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 2 cups beef broth
  • 1 1/3 cup converted rice
  • 3 carrots, peeled and cut into 1 inch pieces
  • 4 oz cream cheese
  • 1/3 cup heavy cream
  • Parmesan cheese, for topping

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the mushrooms, onion powder, salt, pepper, garlic powder, rosemary and thyme. Brown for about 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Place carrots and cream cheese on top.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes then move valve to venting. Remove the lid.
  5. Gently stir in the cream. Salt and pepper to taste. Scoop onto plates and top with a generous portion of parmesan cheese.
