Carol’s Casserole

This is a fast and easy dinner recipe with only 7 ingredients. It’s got the veggies included so you don’t even need to make a side dish. You may even want to double this recipe so you can have lunch leftovers the next couple of days. Try adding in some protein like cooked chicken or cooked ground turkey, if you’d like. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil–or butter
  • Onion–or shallot
  • Mushrooms
  • Chicken broth–or water and Better than Bouillon chicken base
  • Rice-a-Roni Long Grain and Wild Rice
  • Green beans
  • Sharp cheddar cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onions and mushrooms and saute for 5 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice-a-roni and then add in the green beans.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir well. Sprinkle the cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with marinated grilled chicken and a side of pineapple or another fresh fruit.
  • You can add in a cup of cooked chopped chicken with this dish to make it a one pot meal. I like keeping Costco rotisserie chicken on hand in my freezer for this purpose.
  • I used the Rice-a-Roni brand but you can also use another brand like Ben’s. The important thing is that it has the package of seasoning included because it flavors the whole dish.
  • I bought a package of washed and ready to go green beans. There was 12 ounces in the package. I used the entire package. This dish was very heavy on green beans and I liked it that way but you can reduce the green beans by half if you’d like.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with mushrooms are Come Now Casserole, Garlic Parmesan Chicken and Beef Stroganoff.

Description

Cheesy rice, mushrooms and green beans made fast in your Instant Pot.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1/4 cup finely diced onion
  • 4 ounces sliced mushrooms
  • 1 1/2 cups chicken broth
  • 1 (4.3 oz) package Rice-a-Roni Long Grain and Wild Rice
  • 6–12 ounces fresh green beans
  • 1/2 cup shredded sharp cheddar cheese

Instructions

    I do not have an instant pot but I was wondering if this would work in a crock pot?

      Sure, you could try it for sure.
      Saute the onions and mushrooms in the oil on the stove then add them to the slow cooker.
      Stir in the broth, rice-a-roni and green beans.
      Cover and cook on low for 2-3 hours.
      Stir well. Sprinkle the cheese on top and let it melt. Serve and enjoy!

    I don’t have an instant pot but I have a microwave pressure cooker or can I make this recipe in a regular pot? Thanks.

      I’m sure you could easily make this on the stove. Saute the veg and then cook the rice a roni according to package directions, add the green beans in with the rice while cooking. Should be great.
