Description
Cheesy rice, mushrooms and green beans made fast in your Instant Pot.
Ingredients

- 1 Tbsp olive oil
- 1/4 cup finely diced onion
- 4 ounces sliced mushrooms
- 1 1/2 cups chicken broth
- 1 (4.3 oz) package Rice-a-Roni Long Grain and Wild Rice
- 6-12 ounces fresh green beans
- 1/2 cup shredded sharp cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onions and mushrooms and saute for 5 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice-a-roni and then add in the green beans.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir well. Sprinkle the cheese on top and let it melt. Serve and enjoy!
