Description

Cheesy rice, mushrooms and green beans made fast in your Instant Pot.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1/4 cup finely diced onion
  • 4 ounces sliced mushrooms
  • 1 1/2 cups chicken broth
  • 1 (4.3 oz) package Rice-a-Roni Long Grain and Wild Rice
  • 6-12 ounces fresh green beans
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onions and mushrooms and saute for 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice-a-roni and then add in the green beans.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir well. Sprinkle the cheese on top and let it melt. Serve and enjoy!
