If you don’t come now for dinner it WILL be all gone by the time you get to the kitchen! This dinner is so delicious it truly won’t last long! The savory sauce is lick-the-plate good. This recipe calls for a couple specific ingredients (Montreal steak seasoning and Better than Bouillon Vegetable Base) which really makes the sauce so flavorful! I can’t really say how it will turn out with a different brand but I do know the way I made it was amazing. I hope you like it as much as my family did!

Ingredients/Substitution Ideas

  • Olive oil–or canola, vegetable
  • Beef stew meat–or a chuck roast cut into cubes
  • Montreal steak seasoning–or another brand of steak seasoning
  • Water
  • Minced dried onion
  • Carrots
  • Mushrooms
  • Better than Bouillon Vegetable Base–this particular base adds so much flavor to this dish so try to use it instead of substituting it with something else
  • Tomato paste

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the beef and brown on each side for about 4 minutes. Sprinkle in 1 teaspoon of the steak seasoning.

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off the Instant Pot.

Add in the onion, carrots, mushrooms, the remaining 1 tsp of steak seasoning, Better than Bouillon and tomato paste. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes on high pressure. When time is up let pot sit for 15 minutes and then move valve to venting. Remove the lid.

Stir. Serve a scoop over mashed potatoes, egg noodles or hot cooked rice. Enjoy!

Notes/Tips

  • Serve with crusty bread, crescent rolls or a dinner roll.
  • I like to scoop the beef mixture over mashed potatoes, egg noodles or rice. You can go the low-carb route and use cauliflower rice or cauliflower mashed potatoes.
  • You can add cubed potatoes into this dish if you’d like.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Chunks of browned beef, mushrooms and carrots in a savory sauce made in your Instant Pot or Crockpot.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 1/2 pound beef stew meat (or a chuck roast cut into cubes)
  • 2 tsp Montreal steak seasoning, divided
  • 1 cup water
  • 1 Tbsp minced dried onion
  • 4 carrots, peeled and cut into chunks
  • 4 ounces quartered mushrooms
  • 1 Tbsp Better than Bouillon Vegetable Base
  • 1/4 cup tomato paste

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the beef and brown on each side for about 4 minutes. Sprinkle in 1 teaspoon of the steak seasoning.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off the Instant Pot.
  3. Add in the onion, carrots, mushrooms, the remaining 1 tsp of steak seasoning, Better than Bouillon and tomato paste. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes on high pressure. When time is up let pot sit for 15 minutes and then move valve to venting. Remove the lid.
  5. Stir. Serve a scoop over mashed potatoes, egg noodles or hot cooked rice. Enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl it around. Add in the beef and brown on each side for about 4 minutes. Sprinkle in 1 teaspoon of the steak seasoning. Transfer to the slow cooker.
  2. Stir in the water, onion, carrots, mushrooms, the remaining 1 tsp of steak seasoning, Better than Bouillon and tomato paste. 
  3. Cover and cook on low for 6 hours.
  4. Stir. Serve a scoop over mashed potatoes, egg noodles or hot cooked rice. Enjoy!

    We loved it! I added a corn starch slurry to thicken the sauce and was perfect over mashed potatoes.
