Boomshakalaka Casserole–a creamy, flavorful dish made with tender chicken, orzo pasta, crushed tomatoes, and a rich Boursin garlic cheese topping, all cooked quickly in the Instant Pot.

Boomshakalaka Casserole
This easy dump and go Instant Pot chicken dish has an explosion of flavors! You’ll love the slurp slurp good tomato sauce and the creamy garlicky boursin cheese together. The other part of this recipe you’ll love is that it only has a 2 minute pressure cook time! And yes the chicken will cook in that amount of time 🙂
Ingredients/Substitution Ideas
- Fresh chicken tenderloins–or chicken breasts/thighs that have been cut into cubes
- Olive oil
- Balsamic vinegar
- Italian seasoning
- Kosher salt
- Black pepper
- Orzo–I buy in the bulk section at Winco
- Chicken broth–or water and Better than Bouillon
- Crushed tomatoes
- Boursin® Garlic & Fine Herbs Cheese–You can typically find Boursin cheese in the deli or specialty cheese section of the grocery store.
Steps
Add the chicken into the Instant Pot. Stir in the olive oil, vinegar, Italian seasoning, salt and pepper and coat the chicken.

Sprinkle in the orzo. Pour in the broth.

Dump the tomatoes over the top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 7-10 minutes and then move valve to venting. Remove the lid.

Stir. Scoop onto plates and then scoop a couple tablespoons of the Boursin on top of the chicken and pasta. Enjoy!


Notes/Tips
- Serve with sautéed spinach or a green salad.
- Should I stir the Boursin cheese into the dish, or just let it melt on top? If you stir the cheese in, it will melt into the dish, creating a rich, creamy texture throughout the pasta and chicken. This will give the whole dish a uniform, creamy flavor. If you prefer to keep the Boursin cheese more distinct, you can scoop it onto the dish and let it melt on top. This way, each bite has a little burst of creamy, garlicky cheese, which adds a nice contrast to the savory chicken and pasta underneath.
- Try adding in some spinach or mushrooms to this dish.
- If you don’t have balsamic vinegar try using red wine vinegar.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

This is absolutely amazing!! Instead of dolloping some of the Boursin on top of each serving, I stir it into the pot of orzo and chicken after it has cooked. Sooo delicious!!

Confused by posting. It says in the beginning that you need cubed chicken, However, all images and the recipes doesn’t point this out. Which way is the preference?

you can use chicken tenderloins which is what I used or you can cut up chicken thighs/breasts into 1 inch pieces…it’s up to you
