Description

A creamy, flavorful dish made with tender chicken, orzo pasta, crushed tomatoes, and a rich Boursin garlic cheese topping, all cooked quickly in the Instant Pot. 


Ingredients

  • 20 ounces fresh chicken tenderloins
  • 1 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3/4 cup orzo (5 ounces)
  • 1 cup chicken broth
  • 1 (15 oz) can crushed tomatoes
  • 1 (5.3 oz) package Boursin® Garlic & Fine Herbs Cheese

Instructions

  1. Add the chicken into the Instant Pot. Stir in the olive oil, vinegar, Italian seasoning, salt and pepper and coat the chicken. Sprinkle in the orzo. Pour in the broth. Dump the tomatoes over the top. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 7-10 minutes and then move valve to venting. Remove the lid.
  3. Stir. Scoop onto plates and then scoop a couple tablespoons of the Boursin on top of the chicken and pasta. Enjoy!
