Championship Chicken–tender bites of chicken with a luscious tomato sauce, spaghetti, basil and cheese made in your Instant Pot.

Championship Chicken

This easy dump and go recipe for chicken, spaghetti and homemade tomato sauce with cheese is a very easy way to enjoy the flavors of chicken parm without all the work. It is very light, fresh tasting and oh so yummy! I’ve got to say the leftovers are even better. Can’t wait to have it again and yes it is company approved, at least mine loved it. Great weeknight recipe, very easy to put together and very delicious!

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–or chicken tenderloins
  • Garlic powder–or granulated garlic
  • Onion powder
  • Kosher salt
  • Chicken broth–or water and Better than Bouillon chicken base
  • Red wine vinegar–or balsamic vinegar
  • Spaghetti–or thin spaghetti
  • Crushed tomatoes
  • Butter
  • Provolone cheese–or mozzarella cheese
  • Parmigiano reggiano cheese–or parmesan cheese
  • Fresh basil

Steps

Add chicken into Instant Pot. Stir in the garlic powder, onion powder and salt to coat the chicken.

Pour in the broth and vinegar. Break the spaghetti in half and lay it into the pot in a criss cross pattern.

Dump the tomatoes on top of the spaghetti. Place butter into the pot.

 Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the cheeses and basil.

Serve and enjoy!

Notes/Tips

  • Serve with garlic bread and green salad.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • This recipe is best with chicken thighs as they stay moist and tender. You can use chicken breasts but they won’t be as tender.
  • You can use another short cut pasta if you’d like. If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.
  • Other recipes you can make with spaghetti are Instant Pot Monterey Spaghetti and Instant Pot Assassin’s Spaghetti.

Description

Ingredients

Scale

  • 4 Tbsp butter
  • 2 ounces provolone cheese
  • 1/2 cup parmigiano reggiano cheese
  • 1/4 cup chopped fresh basil
