BBQ Ranch Chicken Wraps–an easy family dinner made with slow cooker shredded barbecue chicken, fresh toppings, cheddar cheese, bacon and ranch wrapped in a soft tortilla.

Cabin Meal Series

We’re spending the week of the Fourth of July at our cabin with Reagan, Skyler, and a group of their friends, and this year I decided I didn’t want to spend the whole trip in the kitchen. I’m keeping the menu full of crowd-pleasing meals that are easy to transport, made with simple ingredients, and don’t leave me with a sink full of dishes. They’re all teen-approved and perfect for feeding a hungry group without a lot of stress. So far I’ve shared the French Onion Sloppy Joes, Cabin French Toast Bake and Creamy Ranch Beef and Noodles, Pork Rio Salad and Italian Pasta Salad with Pepperoni.

BBQ Ranch Chicken Wraps

Today’s cabin recipe was easily the favorite of the trip! Everyone loved these chicken wraps and I wish I would have doubled it. Chicken thighs shrink down a lot so I should have known to use more, especially for hungry boys with big appetites. The chicken is dumped into the slow cooker with a few seasonings and barbecue sauce and then slow cooked until it is shreddable. The chicken is then served on warm flour tortillas with a load of toppings and drizzled with ranch. My favorite toppings were the avocados, bacon and pickled jalapenos. Try adding in a crunchy element like Fritos or crispy fried onions for some different textures. This is the perfect meal to make for a crowd because everyone builds their own wrap and can put exactly what they want on it. I will be making these again on Saturday! Yum!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Boneless skinless chicken thighs–or boneless skinless chicken breasts (cook for less time 3 hours on low)
  • Kosher salt
  • Black pepper
  • Garlic powder–or granulated garlic
  • Onion powder–or 1 Tbsp dried minced onion
  • Smoked paprika–or red pepper flakes
  • Barbecue sauce–use your favorite barbecue sauce. We used Sweet Baby Rays
  • Flour tortillas
  • Shredded cheddar cheese–or Colby Jack, Monterey Jack or Pepper Jack
  • Shredded lettuce–romaine or shredded cabbage
  • Diced tomatoes
  • Diced avocado–or guacamole
  • Cooked bacon–or turkey bacon or bacon bits
  • Corn–canned or frozen corn
  • Pickled mild jalapeños–or banana peppers
  • Ranch dressing–or chipotle ranch or avocado ranch

Steps

Pour broth into slow cooker. Add in the salt, pepper, garlic powder, onion powder, smoked paprika and barbecue sauce. Whisk. Nestle the chicken into the slow cooker.

Cover and cook on low for 4-6 hours. Shred the chicken and stir into juices in slow cooker.
Assemble your wrap: place a tortilla on a plate and use a slotted spoon to place a portion of chicken on top of the tortilla. Now add all the toppings ending with a drizzle of ranch. Eat and enjoy!

Notes/Tips

  • We served this alongside watermelon slices. It’s an all in one type of meal though and you really don’t need side dishes, in my opinion.
  • This is a fantastic meal for feeding a crowd because everyone can build their own wrap. Set all the toppings out buffet-style so everyone can customize their own plate. Keep the shredded chicken on the warm setting in the slow cooker for easy serving over a couple of hours.
  • Warm the tortillas for 15–20 seconds in the microwave or briefly on a dry skillet so they’re easier to roll.
  • I used a 6 quart slow cooker. You can also use an 8 quart slow cooker. You can cut this recipe in half when serving smaller numbers and use a smaller slow cooker, if desired.
  • Store chicken leftovers in an airtight container* in the refrigerator for up to 3-4 days. Freeze the chicken leftovers for up to 3 months. Thaw overnight in the refrigerator and reheat in the slow cooker microwave, or on the stovetop. Leftover chicken is also delicious on sandwiches, baked potatoes, nachos, salads or pizza.

Ingredients

Scale
  • 1/2 cup chicken broth
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/8 tsp smoked paprika
  • 2 cups barbecue sauce
  • 5 pounds boneless skinless chicken thighs, trimmed of excess fat

For the wraps:

  • Tortillas
  • Shredded cheddar
  • Shredded lettuce
  • Diced tomatoes
  • Diced avocado
  • Bacon, cooked and crumbled
  • Corn, drained
  • Pickled mild jalapenos
  • Ranch dressing

Instructions

  1. Pour broth into slow cooker. Add in the salt, pepper, garlic powder, onion powder, smoked paprika and barbecue sauce. Whisk. Nestle the chicken into the slow cooker.
  2. Cover and cook on low for 4-6 hours.

Notes

You can also make the chicken in the Instant Pot. Pour broth into the pot. Add in the chicken and seasonings. Pressure cook for 10 minutes with a 10 minute natural pressure release. Remove lid, shred chicken and stir in the barbecue sauce.
