Crock Pot French Onion Meatloaf
If you love French onion soup and you love meatloaf, this recipe gives you the best of both worlds! The meatloaf cooks right on top of caramelized onions and gets so tender and flavorful in the slow cooker. I especially loved the little pockets of melty cheese inside the meatloaf and the gooey cheese on top. Spoon some of those savory French onion juices over each slice or over a pile of mashed potatoes! Enjoy! (This recipe is adapted from The Country Cook).
Ingredients/Substitution Ideas
- Butter–or olive oil
- Yellow onion
- Baking soda–just a tiny amount helps the onions caramelize more quickly
- Lean ground beef–I used 93/7 and it worked great
- Onion soup mix–I used Lipton brand
- Eggs–they help to bind the meatloaf together
- Milk
- Plain bread crumbs
- Worcestershire sauce
- Condensed French onion soup
- Swiss cheese or provolone–Swiss gives a classic French onion flavor, provolone is a little milder
Steps
Heat a pan over medium high heat. Add in the butter and let it melt. Add in the onion and baking soda. Stir occasionally and allow onions to caramelize. Add to the slow cooker. (I did this step inside my slow cooker because it has a stovetop setting).

Add beef, onion soup mix, eggs, milk, bread crumbs and Worcestershire to a mixing bowl. Take 4 slices of the cheese and dice into chunks. Add to the bowl.


Use clean hands to combine the mixture and shape into a loaf. Add the loaf to the slow cooker on top of the onions.

Pour the french onion soup over the top of the meatloaf.


Cover and cook on low for 4 hours or on high for 3 hours (or internal temperature reaches 165° F).
Place the remaining 2 slices of cheese over the top. Place lid on top until the cheese melts.
Slice meatloaf and serve drizzled with juices from the slow cooker


Notes/Tips
- Don’t overmix the meat: Use your hands to gently combine the meatloaf mixture just until everything is evenly distributed. Overworking ground beef can make meatloaf dense.
- Serve it with: Mashed potatoes would be my first choice (drizzle juices from the slow cooker over the top like an onion gravy) but roasted potatoes, egg noodles, green beans, broccoli or asparagus would also be delicious.
- Storing leftovers: Store leftover meatloaf and onions in an airtight container in the refrigerator for 4 days.
- Freezing: Let the meatloaf cool completely, then freeze individual slices or larger portions in an airtight freezer container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- I used my 6 quart Ninja slow cooker. I like this slow cooker because it has a stovetop function which allows me to saute the onions right inside the crock.
