- 1 Tbsp butter
- 1 medium yellow onion, halved and thinly sliced
- 1/4 tsp baking soda
- 24 oz lean ground beef (93/7 worked great)
- 1 (1 oz) packet onion soup mix
- 2 eggs
- 1/2 cup milk
- 1/2 cup plain bread crumbs
- 1 tsp Worcestershire sauce
- 1 (10.5 oz) french onion soup, condensed
- 6 slices of swiss cheese or provolone
Instructions
- Heat a pan over medium high heat. Add in the butter and let it melt. Add in the onion and baking soda. Stir occasionally and allow onions to caramelize. Add to the slow cooker. (I did this step inside my slow cooker because it has a stovetop setting).
- Add beef, onion soup mix, eggs, milk, bread crumbs and Worcestershire to a mixing bowl. Take 4 slices of the cheese and dice into chunks. Add to the bowl.
- Use clean hands to combine the mixture and shape into a loaf. Add the loaf to the slow cooker on top of the onions.
- Pour the french onion soup over the top of the meatloaf.
- Cover and cook on low for 4 hours or on high for 3 hours (or internal temperature reaches 165° F).
- Place the remaining 2 slices of cheese over the top. Place lid on top until the cheese melts.
- Slice meatloaf and serve drizzled with juices from the slow cooker.
