Country Beef Potato Gravy Casserole
Greg and I have been spending quite a bit of time at the cabin lately, trying to eke out every last bit of good weather before it turns cold. The problem is, I don’t always remember to bring all the ingredients I need for my recipes, and running to the store isn’t exactly convenient up here. So I make do with what I have! This time I happened to have a packet of chicken gravy mix, and believe it or not, it ended up being the star of the recipe. It added just the right amount of flavor to the beef, potatoes and vegetables without overpowering anything. It was a happy accident, and Greg and I both loved how this dinner turned out. I hope you enjoy it as much as we did!

Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion
- Kosher salt
- Black pepper
- Garlic powder
- Water–or low-sodium beef or chicken
- Red potatoes–or Yukon Gold potatoes
- Chicken gravy mix–or turkey gravy mix, brown gravy mix
- Frozen mixed vegetables–I used a mixture of peas, carrots, corn and green beans
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper and garlic powder.
Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the potatoes and sprinkle them with the gravy mix.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting.

Stir in the frozen veggies and let them heat up. Serve and enjoy!

Notes/Tips
- Serve with warm dinner rolls or biscuits.
- Cut the potatoes approximately ½- to ¾-inch cubes so they cook evenly.
- Chicken gravy is what I had on hand so that’s what I used. I actually really loved it and think that it was better than if I used beef gravy. Of course you can use brown gravy mix if you’d like.
- Don’t stir before pressure cooking. Layer as directed. This will prevent the gravy mix from scorching on the bottom of the pot and causing a burn error message.
- Make it cheesy! Sprinkle shredded cheddar cheese over the finished dish and let it melt.
- If you have some mushrooms to use up, slice them and sauté them with the ground beef and onions.
- This recipe can be gluten free if you use gluten free gravy mix.
- Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.

- 1/2 cup diced onion
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 1/2 cup water
- 18 oz red potatoes, cut into cubes
- 2 (.87 oz) packets of chicken gravy mix
- 2 cups frozen mixed vegetables
Instructions
Instant Pot Instructions:

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper and garlic powder. Transfer to slow cooker.
- Stir in the water, potatoes and gravy mix.
- Cover and cook on low for 4 hours, or until potatoes are tender.
- Stir in the frozen veggies and let them heat up on the high setting for about 10 minutes.
