Sunday Social Potluck Casserole–an easy one-pot comfort food dinner made with tender chicken, frozen egg noodles, mixed vegetables, cheddar cheese and sour cream made in the Instant Pot.

Sunday Social Potluck Casserole
This easy chicken and noodles with veggies is a perfect dinner to bring to a church social, serve for a family dinner or bring to someone who is sick. The Instant Pot makes it super hands off. It’s a dump and go recipe that’s quick to get started with a couple add ins after the pressure cooking time is done. It’s a complete meal in one pot that both kids and adults happily clean off their plates.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Frozen Reames egg noodles–or another brand of frozen egg noodles like Grandma’s
- Boneless skinless chicken thighs–or boneless skinless chicken breasts
- Onion powder
- Poultry seasoning
- Kosher salt
- Black pepper
- Garlic powder
- Frozen mixed vegetables–or any frozen veggies you like
- Sour cream–or 4 oz cream cheese
- Shredded cheddar cheese–or Colby Jack or Monterey Jack cheese
Steps
Pour broth into Instant Pot. Dump in the frozen egg noodles and chicken. Sprinkle the chicken with onion powder, poultry seasoning, salt, pepper and garlic powder.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Cook the frozen veggies in the microwave according to package directions. Stir them into the pot along with the sour cream and cheddar.


Serve and enjoy!

Notes/Tips
- Serve with salad and garlic bread.
- I used my 4 quart Instant Pot*. You can also make this in 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. Freeze leftovers up to 2 months.
