Description

An easy one-pot comfort food dinner made with tender chicken, frozen egg noodles, mixed vegetables, cheddar cheese and sour cream made in the Instant Pot. 


Ingredients

Scale
  • 1 1/2 cups chicken broth
  • 12 oz Reams frozen egg noodles
  • 18 oz boneless skinless chicken thighs, cut into bite size pieces
  • 1 tsp onion powder
  • 1/2 tsp poultry seasoning
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 (12 oz) bag frozen mixed veggies
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Pour broth into Instant Pot. Dump in the frozen egg noodles and chicken. Sprinkle the chicken with onion powder, poultry seasoning, salt, pepper and garlic powder. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  3. Cook the frozen veggies in the microwave according to package directions. Stir them into the pot along with the sour cream and cheddar. 
  4. Serve and enjoy!
