Charlie’s Casserole–a super fast to make casserole with Doritos, chili, enchilada sauce, sour cream and cheddar cheese.

Charlie’s Casserole

I grabbed this recipe off of food.com. The submitter said, “ABC NEWS’ anchorman Charlie Gibson shared this easy and tasty recipe with the viewers of Good Morning America during the ‘Family Cook-Off’ contest. It was voted the winner by the viewers and it’s become a favorite for us, too.” I was pleased with the ease of this recipe. There is no chopping or browning steps. Just stir the ingredients together and bake in the oven. I think you could change up this recipe to make it your own. Try using tortilla chips instead of Doritos, swap out red enchilada sauce for green, use a can of beans and some ground beef instead of canned chili or add a small can of sliced olives on top of the casserole.

Ingredients/Substitution Ideas

  • Doritos–any flavor you like or tortilla chips
  • Chili with beans–or a can of chili beans and a half pound of cooked ground beef
  • Red enchilada sauce–I used mild
  • Tomato sauce
  • Cheddar–I like sharp
  • Sour cream

Steps

Heat oven to 375° F.

Crush the Doritos. Reserve 1 cup of the crushed Doritos for later.

In a mixing bowl stir all but 1 cup of the Doritos, chili, enchilada sauce, tomato sauce and 1 cup of the cheddar. 

Spread the mixture in a 8 ½ x 11 inch casserole dish. 

Bake for 30 minutes.

Remove from oven and spread the sour cream over the top of the casserole. Top with remaining Doritos and remaining ½ cup of cheese. 

Bake for 10 more minutes.

Serve and enjoy! Top with diced green onions, if desired.

Notes/Tips

  • Serve with shredded lettuce, diced tomatoes and sliced olives.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. This recipe is the best the first day because of the crispy Dorito topping.

Ingredients

  • 1 (13 oz) package of Doritos or tortilla chips
  • 1 (14 oz) can chili with beans
  • 1 (10 oz) can red enchilada sauce

    Add a chopped-up onion and use Fritos and I call this Frito pie. It has been around longer than Charly.
