Instant Pot Walking Tacos
Have you ever had walking tacos before? Basically they are a single serving of chips (like Doritos or Fritos), taco meat and taco toppings that are all put into the bag of chips. You eat the tacos straight out of the bag of chips. Many people like to serve this fun lunch/dinner at birthday parties, camps, family reunions, etc.
It’s a great dinner to serve a crowd because everyone can make their own taco and decide what they want or don’t want on it. You can even make this gluten-free if you have gluten-free chips.
When you have leftover meat you can freeze it for another Taco Tuesday. You can also use the meat in chili! You may want to double the recipe so you can purposefully have leftovers.
I use the Instant Pot to cook the meat and it’s the perfect tool to keep the meat warm until you’re ready to serve. Just use the “keep warm” setting (for up to 3 hours).
Ingredients/Substitution Ideas
- Lean ground beef
- Lean ground turkey
- Cumin
- Chili powder
- Garlic powder
- Kosher salt
- Pepper
- Onion powder
- Smoked paprika
- Beef broth–or chicken broth
- Pinto beans–or black or kidney beans
- Pace picante sauce–I used mild. You can also use salsa.
- Doritos–or Fritos. You’ll need the small individual bags. We often buy these at Costco.
- Taco toppings–lettuce, tomato, avocado, sour cream, shredded cheese
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and turkey and break it up.

Add in the cumin, chili powder, garlic powder, salt, pepper, onion powder and paprika. Brown for about 5 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Dump in the beans and picante sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit 5-10 minutes and then move valve to venting. Remove lid. Stir mixture.

Each person will crush their bag of chips to crunch up the Doritos. Use a slotted spoon to spoon the taco meat inside and then top with your favorite taco toppings. Stir with a spoon and eat straight from a bag!

Notes/Tips
- This is a fun all in one bag meal! You can serve fruit, like watermelon slices, on the side.
- Try this recipe with regular doritos, cool ranch doritos or fritos.
- You can also use this meat for taco salad or regular tacos.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
