Have you ever been to the Oregon coast? It’s so beautiful! With rugged cliffs, sandy beaches and lush greenery it is a sight to see. A few years ago my family took a trip for a week to the Oregon coast. With cool temps we weren’t swimming in the ocean but instead opted for walking along the seashore, driving and sightseeing items on our agenda. One thing we all loved was visiting the Tillamook factory.

Their website says, “Nestled in the charming coastal town of Tillamook, Oregon, join us to explore the rich heritage and craftsmanship of our farmer-made dairy products. Whether you want to learn about our farms and cheesemaking or you just want a tasty meal, the Tillamook Creamery is a dairy-lover’s destination.”

I am definitely a dairy lover (yogurt, cheese, ice cream, I love it all). So this tour was right up my alley. Tillamook is one of my favorite dairy brands and today’s recipe uses their sharp white cheddar to tie it all together. Sliced potatoes are enveloped in a homemade cheese sauce and then the addition of broccoli and smoked sausage makes it into an all-in-one-pot-meal! My favorite!

Ingredients/Substitution Ideas

  • Russet potatoes–or red potatoes
  • Butter
  • Flour
  • Milk
  • Black pepper
  • Onion powder
  • Garlic powder
  • Kosher salt
  • Dried thyme leaves
  • Tillamook cheddar or white cheddar–or colby jack
  • Beef smoked sausage–or cubed ham
  • Frozen broccoli–or green beans, mixed vegetables

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Place the potatoes into a steamer basket*, try not to stack the slices directly on top of each other. Place the steamer basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute on LOW pressure. When time is up move valve to venting and remove the lid. Remove the steamer basket and set aside. Discard the water.

Turn Instant Pot to saute (normal) mode. Add in the butter and let it melt. Add flour then whisk for one minute. Slowly whisk in milk and stir in the pepper, onion powder, garlic powder and thyme. Stir and cook until thickened, 4-5 minutes, then turn off Instant Pot and add cheese. Stir until melted.

Stir in the sausage and broccoli. Fold in the potatoes to coat in the sauce. 

If you have an air fryer lid: Place lid on top and bake at 325 degrees for 15 minutes, or until broccoli is cooked through. If you don’t have an air fryer lid: Scrape mixture into a baking dish and bake at 350 degrees for 30 minutes. 

Serve and enjoy!

Notes/Tips

  • We ate this as an all-in-one-pot meal but if you want some sides try some fruit salad or a green salad.
  • I used my Avokado silicone steamer basket*.
  • I used my Duo Crisp 6 quart Instant Pot*. You can also make this in an 8 quart pot. If your Instant Pot doesn’t have an air fryer lid you can finish this dish off in the oven.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Don’t like broccoli? Try using green beans, corn, mixed vegetables, cauliflower, carrots, etc.
  • You can also use cubes of ham in the place of smoked sausage.
  • Another recipe you can make with white cheddar is Instant Pot White Cheddar Macaroni.

Description

Instant Pot smoked sausage, potatoes and broccoli enveloped in a creamy cheddar cheese sauce. 


Ingredients

Scale
  • 1 1/2 pounds Russet potatoes, peeled and sliced into quarter inch rounds
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 1/2 cups milk
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp dried thyme leaves
  • 1 1/2 cups Tillamook cheddar or white cheddar, shredded
  • 1 (12 oz) package beef smoked sausage, diced
  • 1 (12 oz) package frozen broccoli

Instructions

    THIS CAME OUT REALLY NICE. I DIDN’T USE MY INSTANT POT AS I HAVE NO AIR FRYER, BUT MY 8QT FOODI DOES SO I COOKED IT IN THERE AND IT CAME OUT FINE.. THE ONLY THING I WOULD DO DIFFERENTLY WOULD BE TO PUT THE BROCCOLI IN WITH THE POTATOES TO SOFTEN AND MAKE SURE BROCCOLI WAS DONE WHEN I USED THE AIR FRYER. IT DID CUT THE COOKING TIME DOWN, BUT SOME OF YOU MAY LIKE THE BROCCOLI A LITTLE CRUNCHY, WHICH IS OKAY TOO. THANKS

    What if you don’t have a steamer basket? Can you still do recipe?

      IN REPLY TO KATIES COMMENT. DO YOU HAVE A SMALL PASTA STRAINER OR YOU COULD GO TO THE STORE AND BUY A STRAINER ITS NOT A BASKET. ITS LOOKS LIKE ONE . YOU SET IT IN THE INSTANT POT BUT THE LEAVES OPEN UP LIKE A FLOWER TO THE WIDTH OF THE INTERIOR OF THE POT. LAY YOU VEGGIES ON IT . IT WILL STEAM THE SAME WAY, I HAVE ONE FOR MY 8QT FPPDI AND IT WORKS FINE. I DO HAVE A BASKET TOO, I USE IT FOR MY PASTA OR VEGGIE IF I NEED TO. HOPE THIS HELPS

      HEY ROXANN,, YOU COULD SLOW COOK IT. I THINK IT WOULD BE THE LONG WAY AROUND TO GET IT DONE. YOU WOULD HAVE TO COOK THE VEGGIES FIRST IN SOME KIND OF LIQUID BUT THE PROBLEM WITH THAT IS THE POTATOES GET REAL SOFT THEY WILL COMBINE WITH THE LIQUID AND WANT TO DISCARD THE LIQUID. PLUS YOU HAVE TO COOK THE SAUCE SEPERATELY WITH IT HAVING MILK IN IT AND YOU SLOW COOK FOR SAY 2HRS , IT COULD CURDLE AND YOU JUST TRASHED YOUR MEAL. I WILL SAY I HAVE MADE MAC&CHEESE PUT 2BLOCKS OF CHEESE IN , 1 6OZ CREAM CHEESE AND WHIPPING CREAM AND PUT THE CROCKPOT ON LOW…..I DONT REMEMBER IT CURDLING AT ALL. SO IT MAY BE POSSIBLE TO DO THE SAME THING WITH THIS MEAL, YOU WILL HAVE TO EXPERIMENT ONLY THING I WOULD CUT THE RECIPE IN HALF IN CASE IT DOESNT WORK OUT. HOPE THIS HELPS YA.

      Hi Roxann,

      I would try using a can of cream like cream of mushroom, cream of chicken, etc. This is similar to the pork chops and scalloped potatoes

      Basically get your potatoes, veggies mostly covered with liquid, so if you need to add 1/2 of water to cover the liquid needs its fine. Your only cooking long enough the potatoes about 4-6 hours low. Since this is dairy recipe, than a can of cream is precooked dairy or if you make from starch, make sure its still hot.
