If you’re like me your love of cooking and being in the kitchen wanes in the summer months. For me it’s a combination of things. My kids are home all day and I just can’t find the time and inspiration that I normally find when I have a few peaceful hours by myself. The other reason is that it’s super hot. And hot food doesn’t seem as tempting to me. Plus I’m hot and I don’t want to stand over a stove and cook.
I’m definitely going to be using my Instant Pot this summer since it seems to make everything just a bit easier. Whether that’s the actual cooking process or the clean up…it is just one less step. Here are a few recipes that I find taste good in the summer!
Instant Pot Chicken Fajita Bowls–the pot-in-pot cooking method allows you to cook cilantro lime rice, seasoned chicken, onions and bell peppers all together and in just a few minutes in your electric pressure cooker. Then they are layered in a bowl with cheese, sweet corn, tomatoes, black beans, sour cream and guacamole. It’s definitely a fiesta in your mouth. Olé!

Instant Pot Creamy Sloppy Joes–homemade sloppy joe sauce and ground beef are simmered in the electric pressure cooker and then cream cheese is stirred in as a twist to make the best sloppy joes of your life. What Pressure Cooker Do You Use?
To make my Instant Pot summer recipes I use a 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.
