
1 lb mild bulk Italian sausage
2 garlic cloves,minced
1 cup water
1 (14 oz) can diced tomatoes
1/2 tsp basil
1 (8 oz) can tomato sauce
8 oz frozen tortellini
1 cup chopped onion
5 cups beef broth
1 1/2 cups shredded zucchini
1 cup grated carrots
1/2 tsp oregano
1 medium green pepper, chopped
Brown sausage and drain grease. Place sausage, onions, garlic, broth, water, tomatoes, carrots, and tomato sauce in slow cooker. Cover and cook on LOW for 6 hours. Add basil, oregano, zucchini, green pepper, and tortellini to slow cooker. Cover and cook for another hour on HIGH or until tortellini are done. Makes 8 servings.

This is one of my absolute favorite soups. I adapted it to the slow cooker and it worked and tasted great. My family loves this soup and always gobbles it up. I will definitely be making this in the future. 4 stars.

I love putting tortellini in soups! This one sounds great!
What a great recipe for a cold winter's snowy night. I made this tonight for dinner and it turned out Fantastic. We all love it. What a great tasting soup. Thanks I will keep this one to make again.
