Slow Cooker Italian Tortellini Soup--Italian sausage is browned with onions and garlic and then beef broth, tortellini, tomatoes, green peppers and zucchini are simmered together to produce a soup with ultimate flavor.  

Slow Cooker Italian Tortellini Soup

One of my favorite soups growing up was Italian tortellini soup. It has so much flavor and it’s loved by everyone I know. My sister made it the other day on the stove top and we all loved it! I decided to make it in my slow cooker for those of you who need dinner time flexibility.

Some notes about Slow Cooker Tortellini Soup recipe:

Italian sausage: I use mild ground Italian sausage but you can use hot Italian sausage if you like more kick.

Canned tomatoes: I like to use petite diced tomatoes because the tomatoes are cut smaller. You could probably use fresh tomatoes with this recipe. It would be about 2 cups chopped, seeded tomatoes.

Better than Bouillon Beef Base: I love using Better than Bouillon because it makes a delicious base for soups. It also keeps for a long time in my fridge. You can substitute with beef broth in a can or carton, if you prefer.

Carrots: I ended up using my handy dandy grater to grate my carrots but you can chop them or slice them however you like.

Zucchini: I cut my zucchini into cubes but you can also cut them into rounds

Tortellini: I usually use a package of frozen cheese tortellini for this recipe. They taste great and are available at most grocery stores. You can also use fresh tortellini. Dried tortellini (next to the dry pastas) don’t taste as good and in my opinion sort of ruin the soup. I would suggest not using dry tortellini.

What Slow Cooker Did You Use?

For this slow cooker italian tortellini soup recipe I used my beloved 6 quart oval KitchenAid slow cooker. I love this slow cooker because it cooks evenly and low. I also love this slow cooker because it has a neat timer with satisfying beeping buttons as well as a medium setting for those days where you start your slow cooker at an in-between time. If you’re in the market for a new slow cooker I definitely recommend this one!

Description

Italian sausage is browned with onions and garlic and then beef broth, tortellini, tomatoes, green peppers and zucchini are simmered together to produce a soup with ultimate flavor. 


Ingredients

Scale
  • 1 lb ground Italian sausage (I used mild)
  • 1 cup chopped onion
  • 2 garlic cloves,minced
  • 6 cups water
  • 1 Tbsp Better Than Bouillon Beef Base
  • 1 (14 oz) can diced tomatoes
  • 2 (8 oz) cans tomato sauce
  • 1/2 tsp basil
  • 1 bay leaf
  • 1/2 tsp oregano
  • 1 large carrot, grated or diced
  • 10 oz frozen or fresh tortellini
  • 1 medium zucchini, diced
  • 1 medium green pepper, chopped

Instructions

  1. In a pan on the stove, brown the sausage and drain grease. Add in the onions and garlic and saute until translucent. Place sausage, onions, garlic into slow cooker.
  2. Add in the water, bouillon, tomatoes, tomato sauce, carrots, basil, bay leaf, oregano and carrot into the slow cooker. Cover and cook on LOW for 6 hours or on HIGH for 2 hours.
  3. Add in the tortellini, green pepper and zucchini to the slow cooker. Cover and cook on HIGH for about 30 minutes or until vegetables are tender and the tortellini is cooked through.

    I made this yesterday and the flavors are just delicious and so comforting. The whole family loved it!!!! I don’t eat meat but I love the flavor it adds so I just bought Italian Sausage Brats and sliced them so I could eat around the meat and the rest of my family enjoyed the sausage!!😁😁 Just delish!!!!! Thank you!!!!

    This recipe looks delicious. I am going to make it a day in advance and then serve it the next day. Can I put it back in the crock pot to warm up? Will the noodles get mushy? Thanks

      I would not add the noodles the first day. I would add them the second day and warm everything up in the crockpot.

    Hi Karen, This looks delicious, but I do have a question. Is there anything I can substitute for zucchini? Not a big fan of it. Thanks for any help you can give me. 🙂

      You could just leave it out! Or you could add in green beans cut up.

          No, but I bet you could. You’d just have to really season the burger since sausage has so much flavor from the salt and seasonings that are added to it.

    I made this on Trick-or-Treat night and am now making it again with everyone home for Thanksgiving. This soup is delicious and hearty, even my picky ones loved it😊! I am putting this in the crockpot, some bread in the bread maker and will have a wonderful meal without being in the kitchen all day. A welcome easy dinner after all the Thanksgiving cooking:). I put a small bowl of shredded mozzarella on the table for the kiddos to sprinkle on top of their hot soup, it’s delicious!

    I am making this tonight and while reading the recipe I noticed that you did not add any salt or pepper? Does it need it?

      nope, the sausage flavors it nicely :). You can always salt and pepper to taste at the end if needs be.
