Barn Raising Casserole–a simple but delicious meal of ground beef with onions, carrots, potatoes and cheese. Make it in the slow cooker or the Instant Pot.

Barn Raising Casserole

Today’s recipe is a good one! You’re going to love this easy meat and potatoes recipe. You can use your slow cooker or your Instant Pot to make this recipe. I used my slow cooker and let my dinner cook while I was at church. I came back to a yummy meal!

I adapted this recipe from Amish 365’s barn raising casserole recipe. The original recipe was more of a meatloaf casserole but I changed it up to make it into a browned ground beef recipe instead. I loved my version and so did my family.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7, or ground turkey
  • Onion–yellow, white
  • Carrot
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • Yukon gold potatoes-or peeled russets, red potatoes
  • Ketchup–or bbq sauce
  • Cheddar cheese–I like using sharp cheddar

Steps

Heat a pan over medium high heat (my slow cooker has a stovetop setting so I just use that instead of cooking on the stove). Add in the ground beef and break it up. Add in the onions and carrots. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and smoked paprika. Transfer to the slow cooker. 

Stir in the potatoes and ketchup. 

Cover slow cooker and cook on low for 3-4 hours. 

Sprinkle the cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with steamed vegetables, fruit salad and cornbread with honey butter.
  • I used my 6 quart Ninja slow cooker. I like this slow cooker because it has a stovetop function so I browned the meat directly in the slow cooker instead of on the stovetop.
  • This recipe is gluten-free. This recipe can be dairy free if you leave out the cheese.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A simple but delicious meal of ground beef with onions, carrots, potatoes and cheese. Make it in the slow cooker or the Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 cup diced onion
  • 1 carrot, shredded
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 3 medium Yukon gold potatoes, thinly sliced
  • 1/4 cup ketchup
  • 1/2 cup shredded cheddar cheese

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onions and carrots. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and smoked paprika. Transfer to the slow cooker. 
  2. Stir in the potatoes and ketchup. 
  3. Cover slow cooker and cook on low for 3-4 hours. 
  4. Sprinkle the cheese on top and let it melt. Serve and enjoy!

Instant Pot Instructions:

  1. Pour 1 ½ cups of water into bottom of Instant Pot. In a steamer basket add the potatoes. Place steamer basket into the Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting. Remove the lid.
  3. Move steamer basket out of the Instant Pot. Discard the liquid. 
  4. Turn Instant Pot to saute setting. When display says HOT add in the ground beef, onions and carrots. Cook until meat is browned and the onions are soft. Drain off excess grease.
  5. Stir in the salt, pepper, garlic powder, smoked paprika, potatoes and ketchup. 
  6. Sprinkle the cheese on top and let it melt.
  7. Serve and enjoy!
