Description
An easy slow cooker recipe with beef, potatoes, sweet corn and cheese.
Ingredients

- 1 pound lean ground beef
- 1 cup diced onion
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/4 tsp smoked paprika
- 1 1/2 pounds russet potatoes, peeled and cut into 1 inch cubes
- 1 1/2 cups frozen sweet corn
- 1/4 cup ketchup
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion, kosher salt, pepper, garlic powder and smoked paprika. Brown for about 5 minutes. Transfer to the slow cooker.
- Stir in the potatoes, corn and ketchup.
- Cover and cook on low for 3-4 hours.
- Sprinkle the cheese on top and let it melt. Salt and pepper to taste. Serve and enjoy!
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, kosher salt, pepper, garlic powder and smoked paprika. Brown for about 5 minutes. Turn off Instant Pot.
- Stir in the potatoes, corn and ketchup.
- Cover Instant Pot with lid. Turn Instant Pot to the slow cook setting on “more” and cook for 3-4 hours, or until potatoes are tender.
- Sprinkle the cheese on top and let it melt. Salt and pepper to taste. Serve and enjoy!
