White Castle Casserole–a low-carb Instant Pot or oven casserole with ground beef, onion and cheese with a crust on top and garnished with pickle and mustard.

Low Carb White Castle Casserole

White Castle Casserole

If you live in the midwest you’re probably familiar with White Castle restaurants. They are famous for their sliders, “made with 100% beef, steam grilled on a bed of onions and served with a slice of pickle on our signature bun.” Today’s recipe takes the flavors from their sliders and puts them into a casserole form with a low carb crust instead of the bread. You can easily make this in your stove/oven or if you have an Instant Pot with an air fryer lid you can use that. This casserole has lots of flavor and satisfies. Don’t forget to top with the pickles and mustard–a must!

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7 or ground turkey.
  • Onion soup mix
  • Eggs
  • Heavy cream
  • Mayonnaise
  • Greek yogurt
  • Sharp cheddar cheese
  • Sliced dill pickles, diced tomatoes and mustard

Steps

You can make this recipe in your Instant Pot if you have an air fryer lid. If you don’t have an air fryer lid there are instructions in the recipe card below for the stove/oven.

Turn Instant Pot to saute setting. When display says hot add in the beef and break it up. Stir in the onion soup mix. Brown until no pink remains. Turn off Instant Pot.

Stir in half of the cheese and then sprinkle the remaining cheese on top.

In a bowl whisk together the eggs, cream, mayo and yogurt.

Pour the mixture evenly over the top.

Place air fryer lid on top. Bake at 300 degrees for 10 minutes and then 325 for 10 more minutes. 

Scoop onto plates and top with mustard, pickle and tomatoes. 

Notes/Tips

  • Serve with mashed cauliflower, a side salad or some roasted vegetables.
  • I used my Duo Crisp 6 quart Instant Pot*.
  • Store leftovers in an airtight container* in the refrigerator.
  • This recipe can be made gluten-free if you use gluten-free onion soup mix.
  • Other recipes you can make with heavy cream are Instant Pot Smothered Chicken And Rice and Life Changing No Peel Cheddar And Chive Instant Pot Mashed Potatoes.
  • This recipe can also be made “not low carb” by using a 12 ounce package of crescent rolls. Instead of using the egg/mayo mixture you will use crescent rolls as the crust. Unroll the tube of crescent rolls over the top of the beef mixture, sealing seams and covering the contents in the pot/pan. Bake as directed in the recipe card.

Description

A low-carb Instant Pot or oven casserole with ground beef, onion and cheese with a crust on top and garnished with pickle and mustard.  


Ingredients

Scale
  • 1 pound lean ground beef (I used 93/7)
  • 1 (1 oz) packet onion soup mix
  • 2 eggs
  • 1/4 cup heavy cream
  • 1/4 cup mayonnaise
  • 1/4 cup greek yogurt
  • 2 ounces shredded sharp cheddar cheese
  • For topping: sliced dill pickles, diced tomatoes and mustard

Instructions

Stove and Oven Instructions:

  1. Preheat oven to 350 degrees.
  2. Heat an oven safe pan over medium high heat on the stove. Add in the beef and break it up. Stir in the onion soup mix. Brown until no pink remains. Turn off the heat. Stir in 1 ounce of the cheese with the meat and then sprinkle the remaining 1 ounce of cheese on top of the meat.
  3. In a bowl whisk together the eggs, cream, mayo and yogurt. Pour the mixture evenly over the top.
  4. Bake in oven for 30-35 minutes. Let sit for 10 minutes before serving.
  5. Scoop onto plates and top with mustard, pickle and tomatoes. 

Instant Pot with air fryer lid Instructions:

  1. Turn Instant Pot to saute setting. When display says hot add in the beef and break it up. Stir in the onion soup mix. Brown until no pink remains. Turn off Instant Pot. Stir in 1 ounce of the cheese with the meat and then sprinkle the remaining 1 ounce of cheese on top of the meat.
  2. In a bowl whisk together the eggs, cream, mayo and yogurt. Pour the mixture evenly over the top.
  3. Place air fryer lid on top. Bake at 300 degrees for 10 minutes and then 325 for 10 more minutes.

    I have been making your recipes for yours but this one was not good at all. The sauce in top never browned and the mayo just left it soaking in grease.

    Can you clarify your instructions …… you say when cooking the meat …..
    “ Stir in half of the cheese and then sprinkle the remaining cheese on top.”

    Then for the topping you say ……
    “ In a bowl whisk together the eggs, cream, mayo, yogurt and half of the cheese. Pour the mixture evenly over the top.”

    How much cheese do I need? …… your instructions indicate using half the cheese 3 times ….. that just isn’t possible …. LoL!!

      I can see how it might be confusing if you try to follow both IP/Oven and IP w/Air Frier lid. Otherwise, I think I am only seeing it 2x per method.

        Then you and I are reading two different recipes David Polister ……

        Stove/Oven recipe
        Stir in HALF OF THE CHEESE and then sprinkle the REMAINING CHEESE on top. (this would indicate you would be “sprinkling” the other half of the cheese on top of the meat)

        In a bowl whisk together the eggs, cream, mayo, yogurt and HALF OF THE CHEESE. Pour the mixture evenly over the top.

        Instant Pot with AirFryer Lid Instructions
        Stir in HALF OF THE CHEESE and then sprinkle the REMAINING CHEESE on top.
        (again, this would indicate you would be “sprinkling” the other half of the cheese on top of the meat)

        In a bowl whisk together the eggs, cream, mayo, yogurt and HALF OF THE CHEESE. Pour the mixture evenly Over the top.

        Both these methods clearly say “stir in HALF OF THE CHEESE and then sprinkle the REMAINING CHEESE on top”

        Followed by …..

        “In a bowl whisk together the eggs, cream, mayo, yogurt and HALF OF THE CHEESE”

        To me, this indicates you are using two 1/2 amounts of cheese PLUS the cheese you are sprinkling in top of the meat, in the first part of the instruction, equaling three amounts of cheese …… this is what I am asking to be clarified.

        Hi Karen.
        First I love the creative recipes. I’m originally from Michigan and LOVE White Castle!!

        I live in Australia and so looking forward to trying this recipe. I followed to a tee. My apologies…but this recipe nowhere near tasted like White Castle.

        Your ingredients aren’t in a White Castle burger.

        It was nice…but NOT White Castle.

        Hope you can provide a more “spot on” recipe.
