Description
A low-carb Instant Pot or oven casserole with ground beef, onion and cheese with a crust on top and garnished with pickle and mustard.
Ingredients

- 1 pound lean ground beef (I used 93/7)
- 1 (1 oz) packet onion soup mix
- 2 eggs
- 1/4 cup heavy cream
- 1/4 cup mayonnaise
- 1/4 cup greek yogurt
- 2 ounces shredded sharp cheddar cheese
- For topping: sliced dill pickles, diced tomatoes and mustard
Instructions
Stove and Oven Instructions:
- Preheat oven to 350 degrees.
- Heat an oven safe pan over medium high heat on the stove. Add in the beef and break it up. Stir in the onion soup mix. Brown until no pink remains. Turn off the heat. Stir in 1 ounce of the cheese with the meat and then sprinkle the remaining 1 ounce of cheese on top of the meat.
- In a bowl whisk together the eggs, cream, mayo and yogurt. Pour the mixture evenly over the top.
- Bake in oven for 30-35 minutes. Let sit for 10 minutes before serving.
- Scoop onto plates and top with mustard, pickle and tomatoes.
Instant Pot with air fryer lid Instructions:
- Turn Instant Pot to saute setting. When display says hot add in the beef and break it up. Stir in the onion soup mix. Brown until no pink remains. Turn off Instant Pot. Stir in 1 ounce of the cheese with the meat and then sprinkle the remaining 1 ounce of cheese on top of the meat.
- In a bowl whisk together the eggs, cream, mayo and yogurt. Pour the mixture evenly over the top.
- Place air fryer lid on top. Bake at 300 degrees for 10 minutes and then 325 for 10 more minutes.
- Scoop onto plates and top with mustard, pickle and tomatoes.
