Western Skies Casserole
Everyone is going to love the flavors in this beefy Instant Pot casserole with a western flair and flavors! With easy ingredients you probably already have at home this recipe can come together for dinner tonight. The leftovers taste great for lunches in the next couple of days too.
Ingredients/Substitution Ideas
- Ground beef–or ground turkey
- Onion–yellow or white
- Kosher salt
- Black pepper
- Chili powder
- Garlic powder
- Cumin
- Beef broth–or water and Better than Bouillon
- Converted rice–or long grain white rice
- Black beans–or kidney beans, pinto beans
- Corn–or canned, frozen
- Salsa–or picante sauce (I used mild picante sauce)
- Cheddar cheese–I used sharp
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, salt, pepper, chili powder, garlic powder and cumin.

Pour in the broth and scrape bottom of pot so that nothing is sticking.
Sprinkle in the rice. Dump in the beans, corn and 1 cup of the salsa.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting and remove the lid.

Stir in the remaining salsa and cheddar.

Serve and enjoy! Top with sour cream, diced avocado and diced tomato, if desired.

Notes/Tips
- Serve with shredded lettuce, diced tomatoes, diced avocado, sour cream and cilantro.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

How to I substitute Basmati rice in this recipe? I love your recipes. Thank you…..A. Flores
you can just add in the basmati straight across for the converted…should be fine as long as it’s white basmati and not brown
will recipe work in crockpot
I think this one may work in the crockpot. I would cook on high for 2-3 hours, or until rice is cooked through. You’ll have to brown the ground beef before adding it into the crockpot.
could I sub lentils or quinoa for the rice with the same cooking time?
lentils might work but they will probably need a few more minutes to cook and more broth too. I would cook lentils for 8 minutes and lentils need a 1:1.75 lentil to broth ratio. Quinoa only needs a 1 minute pressure cook time with a 10 minute natural pressure release. and I would use 1:1.5 cups quinoa to broth ratio.
