Description

Seasoned ground beef with beans, salsa, rice, corn and cheese made fast in your Instant Pot. 


Ingredients

Scale
  • 1 pound ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 1/2 cups beef broth
  • 1 cup converted rice
  • 1 (15 oz) can black or kidney beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1 1/2 cups salsa or picante sauce, divided
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, salt, pepper, chili powder, garlic powder and cumin.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Sprinkle in the rice. Dump in the beans, corn and 1 cup of the salsa.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting and remove the lid. 
  5. Stir in the remaining salsa and cheddar. 
  6. Serve and enjoy! Top with sour cream, diced avocado and diced tomato, if desired.
