Description
Seasoned ground beef with beans, salsa, rice, corn and cheese made fast in your Instant Pot.

- 1 pound ground beef
- 1 cup diced onion
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 1/2 cups beef broth
- 1 cup converted rice
- 1 (15 oz) can black or kidney beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 1/2 cups salsa or picante sauce, divided
- 1/2 cup shredded cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, salt, pepper, chili powder, garlic powder and cumin.
- Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Sprinkle in the rice. Dump in the beans, corn and 1 cup of the salsa.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting and remove the lid.
- Stir in the remaining salsa and cheddar.
- Serve and enjoy! Top with sour cream, diced avocado and diced tomato, if desired.
