Hungry Jack Casserole

This was a winning dish. Even my bean-hating husband loved this dish! The pot was scraped clean. It’s a simple recipe with ground beef, beans and cheese. Don’t forget to serve with a biscuit on the side! I just used refrigerated biscuits but you can make your own biscuits from scratch, if you’d like.

Ingredients/Substitution Ideas

  • Pillsbury grands biscuits–or homemade
  • Lean ground beef–I used 93/7 and it didn’t need to be drained. Ground turkey can also be used.
  • Dried minced onion–or a half cup fresh chopped
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Chili powder
  • Worcestershire sauce
  • Beef broth–or chicken broth
  • Converted rice–or long grain white rice
  • Dijon mustard
  • Pinto beans–or black, kidney
  • Tomato sauce
  • Ketchup–I use Heinz
  • Cheddar cheese–I like sharp

Steps

Bake the biscuits according to package directions.

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, salt, pepper, garlic powder and chili powder. Brown for about 5 minutes. 

Pour in the Worcestershire and broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice. Dump in the mustard, pintos, tomato sauce and ketchup.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir.

Sprinkle the cheese on top and let melt. Serve with a biscuit.

Notes/Tips

  • Serve with a green salad or a fruit salad.
  • This recipe can be gluten free if you don’t serve with biscuits and if you use a gluten free worcestershire sauce.
  • If you’d rather you can serve with cornbread instead of biscuits.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Double this recipe for extra leftovers! Double the ingredients but keep the cooking time the same.

Description

Beef, beans, rice and cheese made in your Instant Pot and served with a biscuit on the side.  


Ingredients

Scale
  • 1 package Pillsbury grands biscuits
  • 1 pound lean ground beef
  • 1 Tbsp dried minced onion
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 Tbsp Worcestershire sauce
  • 1/2 cup beef broth
  • 1/4 cup converted rice
  • 1 Tbsp Dijon mustard
  • 1 (15 oz) can pinto beans, rinsed and drained
  • 1 (8 oz) can tomato sauce
  • 1/4 cup ketchup
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Bake the biscuits according to package directions.

    I’m in the middle of making this recipe but the Dijon mustard has been left out of the recipe instructions. I can only guess that it goes a long with the ketchup and the other ingredients but it doesn’t when to add that specific ingredient. It looked good and I’m thinking it will taste good the instructions just need to be edited to include the mustard.

    I can’t wait to try this casserole. I made the lettuce wraps yesterday and they are delicious. I freeze uncooked rice in 1 cup packages, I used 1/2 for the lettuce wraps, so I have 1/2 cup left to use up. I may double this casserole and use the rest of my rice. I’ll try freezing 1/2 of the casserole for later.

    Miss Kim B . I like lima beans .I am 65 and have only had canned . I am getting a box for me too . I would love to know more , I believe I will Google them . Or tell Greg to save some for me . Thank You

    What do you mean Greg doesn’t like beans?? What’s wrong with that boy?? You need to pack him up in a box & UPS him down here & I’ll cook him up a big pot of Fordhook limas and we’ll see just how fast he changes that tune!! P.S. it’s a long trip, be sure and poke some air-holes in that box ;-}
