Truth Casserole–a dish with tater tots, smoky bacon, spicy Rotel, creamy sour cream, mushroom soup, and plenty of melted cheddar for a cheesy, comforting dish with a little kick.

Truth Casserole
Today’s recipe is a spin off of Truth BBQ’s tater tot casserole. It sort of reminded me of a tater tot version of king ranch chicken casserole. I think this was the case because of the Rotel, sour cream and cream of mushroom soup. If you want this more meaty try adding in a pound of cooked ground beef or some rotisserie chicken. To me, this dish was better the second day as leftovers 🙂
Ingredients/Substitution Ideas
- Tater tots–I feel like you could also make this with frozen hashbrowns. If you use frozen hashbrowns you’ll need to bake for 30 extra minutes.
- Thick cut bacon
- Onion
- Rotel
- Sour cream
- Cream of mushroom soup–or cream of chicken soup
- Cajun seasoning
- Cheddar cheese–I used sharp
Steps
Bake or air fry the tater tots according to package directions.
While tots are baking fry up the bacon in a medium skillet. Once crispy add in the onion and fry the onion in the bacon grease for 4 minutes. Drain off excess grease and set aside.

In a large bowl stir together the tots, bacon, onions, Rotel, sour cream, cream of mushroom soup, cajun seasoning and 1 cup of the cheese.

Heat oven to 350° F. Spread the mixture in a 9×9 inch pan. Bake for 30 minutes.

Sprinkle the remaining cup of cheese on top and bake for 5-10 more minutes.


Serve and enjoy!

Notes/Tips
- Serve with corn on the cob and a green salad.
- I baked this in a glass 8×8 dish*.
- Use pepper jack or Monterey Jack cheese in place of cheddar for a slightly spicier flavor.
- Add protein by stirring in cooked chicken or ground beef to make it a heartier one-dish meal.
- This recipe can be gluten free if you use gluten free cream of mushroom soup and tater tots.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 1 cup sour cream
- 1 (10.5 oz) can cream of mushroom soup

- 2 cups shredded cheddar cheese, divided
