Description

A dish with tater tots, smoky bacon, spicy Rotel, creamy sour cream, mushroom soup, and plenty of melted cheddar for a cheesy, comforting dish with a little kick.


Ingredients

Scale
  • 24 oz tater tots
  • 3 slices thick cut bacon, chopped
  • 1/2 cup chopped onion
  • 1 (10 oz) can Rotel, drained
  • 1 cup sour cream
  • 1 (10.5 oz) can cream of mushroom soup
  • 2 tsp cajun seasoning
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Bake or air fry the tater tots according to package directions.
  2. While tots are baking fry up the bacon in a medium skillet. Once crispy add in the onion and fry the onion in the bacon grease for 4 minutes. Drain off excess grease and set aside.
  3. In a large bowl stir together the tots, bacon, onions, Rotel, sour cream, cream of mushroom soup, cajun seasoning and 1 cup of the cheese. 
  4. Heat oven to 350° F. Spread the mixture in a 9×9 inch pan. Bake for 30 minutes.
  5. Sprinkle the remaining cup of cheese on top and bake for 5-10 more minutes. 
  6. Serve and enjoy!
