Description
A dish with tater tots, smoky bacon, spicy Rotel, creamy sour cream, mushroom soup, and plenty of melted cheddar for a cheesy, comforting dish with a little kick.

- 24 oz tater tots
- 3 slices thick cut bacon, chopped
- 1/2 cup chopped onion
- 1 (10 oz) can Rotel, drained
- 1 cup sour cream
- 1 (10.5 oz) can cream of mushroom soup
- 2 tsp cajun seasoning
- 2 cups shredded cheddar cheese, divided
Instructions
- Bake or air fry the tater tots according to package directions.
- While tots are baking fry up the bacon in a medium skillet. Once crispy add in the onion and fry the onion in the bacon grease for 4 minutes. Drain off excess grease and set aside.
- In a large bowl stir together the tots, bacon, onions, Rotel, sour cream, cream of mushroom soup, cajun seasoning and 1 cup of the cheese.
- Heat oven to 350° F. Spread the mixture in a 9×9 inch pan. Bake for 30 minutes.
- Sprinkle the remaining cup of cheese on top and bake for 5-10 more minutes.
