Slow Cooker Chicken, White Bean and Pinto Bean Soup

This hearty soup is filled with chicken chunks, white beans, pinto beans, sour cream, Parmesan cheese and flavorful seasonings.  Ever since I made it my husband can’t stop talking about it.  It may just be our newest favorite soup!

I have very much enjoyed being able to develop recipes in the past year using Hurst’s Beans.  They specialize mostly in seasoned dried beans that are found in most grocers in the U.S.  You can follow the easy recipes on the back of the package or you can be creative and mix it up a bit.  If you want to find more recipe ideas using Hurst’s products make sure to follow them on their facebook page.   Some of the recipes that I’ve created are cheesy bacon bean dip, slow cooker cheddar, bacon and bean dip, smoky 15 bean soup with sausage, pork tomatillo chili  and cajun ham and bean soup. I’ve loved all of these recipes but this new one is by far our family’s favorite!  It is chock full of good stuff in every single bite.  I think that’s what makes it so good.  Plus the seasonings in it are super yummy.  You definitely need to put this on your menu this week because I’m positive you’re going to love it!

For this particular soup, I used Hurst’s Slow Cooker Bacon and Beans.  Out of all of the products I’ve tried I think that I like the seasoning in these beans the best.  I just don’t think that you can go wrong with bacon seasoning.  MMMMMMM–bacon!  Plus, I personally really like white beans and pinto beans.  I do feel that this soup is almost better the next day.  Soup seems to be like that, doesn’t it?

Crockpot Soup that is super easy to make and super delicious to eat.
Pinto and white beans are the base of this soup.  Add in some bacon seasoning and chicken and just you can’t go wrong.
Recipe for Hurst’s Slow Cooker Chicken,
White & Pinto Bean Soup
Makes 10 servings
Ideal slow cooker size: 6 quart
Cooking time:  8-10 hours on low or
5-6 hours on high
1 package of Hurst’s Hambeens Brand Slow Cooker Bacon and Beans (reserve the seasoning packet)
1 (4 oz) can green chiles
2 Tbsp dried onion
1 tsp garlic powder
1/2 tsp cajun seasoning
7 cups water
4 tsp chicken bouillon 
1/2 tsp salt 
2 lbs boneless, skinless chicken thighs (mine were frozen which worked
really well)
1 (16 oz) container sour cream (low fat is okay)
2 Tbsp flour
1 1/2 cups grated Parmesan cheese
1 tsp pepper
1.  Rinse dried beans and pour into
large slow cooker.  Reserve the seasoning packet that comes in the package
for later.
2.  Add in green chiles, onion,
garlic powder, cajun seasoning, water, bouillon and salt.  Stir a bit.
 Nestle the chicken thighs in and try to submerge in the liquid so they
can stay as moist as possible.
3.  Cover and cook on LOW for 8-10
hours or on HIGH for 5-6 hours, or until beans are soft and cooked through.
 Remove the chicken and shred or cut into chunks.  Add chicken back
into the slow cooker.
4.  Stir the flour into the container
of sour cream and then stir the sour cream into the slow cooker (the flour will
keep the soup from curdling).  Stir in Parmesan cheese, seasoning packet
and pepper.  Add more salt and pepper to taste, if needed.  Ladle
into serving bowls and enjoy!

    This soup looks delicious! I am making it today but was wondering what I could substitute for the seasoning packet that comes in the bean and bacon hurst hambeens beans. I looked at 3 different stores with no luck. Any suggestions??

      Tiffany, where do you live? I'll find out if they are available in your area yet!
      I'm not sure what to sub for the seasoning packet…it is like the secret to the awesomeness of the soup. Maybe you could order the beans from them directly: 1-800-HAMBEEN
