Description
A one-pot meal with smoked sausage, beans, corn and rice for an easy, protein and fiber-packed dinner made in the slow cooker.

- 12 oz beef smoked sausage, diced
- 1 1/2 cups frozen sweet corn
- 1 (15.5 oz) can black eyed peas, rinsed and drained
- 1 (15.5 oz) can kidney beans, rinsed and drained
- 1 (15.5 oz) can pinto beans, rinsed and drained
- 1 (10 oz) can Rotel tomatoes with green chiles
- 1 tsp black pepper
- 1 tsp seasoned salt
- 1 1/2 cups chicken broth
- 1 cup converted rice
- 1 cup salsa or 1 can tomato sauce
Instructions
- Add all ingredients into slow cooker and stir.
- Cover slow cooker and cook on high for 2-3 hours or on low for 4 hours, or until rice is tender. All slow cookers cook differently so your cooking time might be less or more.
- Stir and serve. Top with cheese, if desired.
