Wanmansita Casserole–noodles with seasoned ground beef, mushrooms, tomatoes and cheese (plus a few other random ingredients) made fast in the Instant Pot.

Wanmansita Casserole
Today’s recipe is a random one! Haha! I snagged the recipe from here, it’s apparently a recipe from a cookbook called Lake Eden Cookbook by Joanne Fluke. It’s kind of one of those recipes that uses a bit of this and a bit of that and cleans out your pantry. The boys loved it and took it down quickly. The opinion on the use of water chestnuts was mixed. I’ll let you be the judge of whether to use them or not.
Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7. Or ground turkey
- Onion
- Celery
- Mushrooms
- Kosher salt
- Chili powder
- Cumin
- Garlic powder
- Black pepper
- Beef broth
- Old fashioned egg noodles–I use Mrs. Miller’s brand, in the stand up bag next to other pastas. You can also use penne pasta or another type of short cut pasta.
- Diced green chiles–I used mild. You can also chop up a green bell pepper.
- Crushed tomatoes
- Water chestnuts–optional
- Cheddar cheese–I like using sharp
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, celery and mushrooms. Brown for 5 minutes. Stir in the salt, chili powder, cumin, garlic powder and black pepper.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the noodles. Dump in the green chiles, crushed tomatoes and water chestnuts. Don’t stir.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes when time is up let pot sit for 10 minutes then move valve to venting. Remove the lid.

Stir in cheese and serve.


Notes/Tips
- Serve with a green salad or another vegetable like green beans.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 pound lean ground beef
- 1 cup diced onion
- 1 rib of celery, diced
- 4 ounces mushrooms, quartered
- 1 tsp kosher salt
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 2 cups beef broth
- 8 ounces old fashioned egg noodles
- 1 (4 oz) can diced green chiles
- 1 (14.5 oz) can crushed tomatoes
- 1 (8 oz) can sliced water chestnuts
- 1 cup shredded cheddar cheese
Instructions

It’s from the book I mentioned in the post…I really have no idea what it means though haha!
