Description
Beef and pasta with a taco flare made fast in the Instant Pot.
Ingredients

- 1 pound lean ground beef
- 1/2 tsp kosher salt
- 1 tsp black pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp onion powder
- 1 tsp garlic powder
- Pinch of oregano
- 2 cups beef broth
- 8 ounces rotini
- 1 (15.25 oz) can corn, drained
- 1 (15.5 oz) can black beans, rinsed and drained
- 1 (8 oz) can tomato sauce
- 1 cup picante sauce or salsa
- 1/3 cup sour cream
- 3/4 cup shredded colby jack
- Toppings: diced fresh tomatoes, diced green onions
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, chili powder, cumin, onion powder, garlic powder and oregano.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rotini. Dump in the corn, beans, tomato sauce and picante sauce. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid.
- Stir in the sour cream and cheese.
- Scoop onto plates and serve topped with fresh tomatoes and green onions.
