Description

Beef and pasta with a taco flare made fast in the Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Pinch of oregano
  • 2 cups beef broth
  • 8 ounces rotini
  • 1 (15.25 oz) can corn, drained
  • 1 (15.5 oz) can black beans, rinsed and drained
  • 1 (8 oz) can tomato sauce
  • 1 cup picante sauce or salsa
  • 1/3 cup sour cream
  • 3/4 cup shredded colby jack
  • Toppings: diced fresh tomatoes, diced green onions

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, chili powder, cumin, onion powder, garlic powder and oregano. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rotini. Dump in the corn, beans, tomato sauce and picante sauce. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid. 
  5. Stir in the sour cream and cheese. 
  6. Scoop onto plates and serve topped with fresh tomatoes and green onions.
