Ingredients

Scale
  • 1/2 pound Italian sausage
  • 1/2 cup diced onion
  • 4 ounces quartered mushrooms
  • 2 cups chicken broth
  • 8 ounces penne pasta
  • 1 (24 oz) jar pasta sauce
  • 1/2 cup mini pepperoni
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and mushroom. Brown for 5 minutes. Drain off excess grease.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the penne. Dump sauce on top evenly. Add in the pepperoni.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the cheeses. Serve and enjoy. 

Notes

This recipe can easily be doubled. Double ingredients and keep cooking time the same.
