Ingredients

- 1/2 pound Italian sausage
- 1/2 cup diced onion
- 4 ounces quartered mushrooms
- 2 cups chicken broth
- 8 ounces penne pasta
- 1 (24 oz) jar pasta sauce
- 1/2 cup mini pepperoni
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded parmesan cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and mushroom. Brown for 5 minutes. Drain off excess grease.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the penne. Dump sauce on top evenly. Add in the pepperoni.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir in the cheeses. Serve and enjoy.
Notes
This recipe can easily be doubled. Double ingredients and keep cooking time the same.
