Strong Personality Casserole–tortellini with Italian sausage, roasted tomatoes, spinach and parmesan cheese made in the Instant Pot. An anything but boring dinner!

Instant Pot Tortellini Dinner

Strong Personality Casserole

Dinner deserves to be better than bland! This dinner will spark some excitement. I know it did for me on a boring Tuesday night. With some strong personality ingredients like Italian sausage, balsamic vinegar, roasted tomatoes and more you will get an ultra flavorful dish that blends together and is strong (but not overpowering). This is a winning dinner and was very much enjoyed at my house. Try it out this week 🙂

Ingredients/Substitution Ideas

  • Cherry or grape tomatoes
  • Olive oil
  • Kosher salt and pepper
  • Italian sausage–I used mild
  • Dried minced onion–or ½ cup diced fresh onion
  • Garlic–I buy a big bag of peeled garlic cloves at Sam’s or Costco and freeze it
  • Chicken broth–or beef broth
  • Balsamic vinegar
  • Dried rosemary leaves
  • Dried sage
  • Dried thyme leaves
  • Red pepper flakes
  • Dijon mustard
  • Frozen tortellini–find it by the frozen breads/doughs at your grocery store
  • Spinach–fresh or frozen
  • Parmesan cheese–or ¼ cup of goat cheese

Steps

Preheat oven to 400 degrees. Slice the tomatoes in half and place a baking sheet. Drizzle the tomatoes with the olive oil and sprinkle with a pinch of salt and pepper. Roast in the oven for 20 minutes. 

Meanwhile, turn Instant Pot to saute setting. When display says HOT add in the Italian sausage and break it up. Add in the onion. Brown for 4 minutes. Stir in the garlic and saute for 1 minute.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Stir in the vinegar, rosemary, sage, thyme, red pepper and dijon. Add in the tortellini.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes on LOW pressure. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in spinach, cheese and the roasted tomatoes. 

Serve and enjoy!

Notes/Tips

  • Serve with a green side salad or some raw veggies and dip.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with balsamic vinegar are Chicken Margherita Pasta and Instant Pot Flank Steak.
  • Feel free to double the amount of tomatoes. They are so good!
  • Want stronger flavor? Try adding extra balsamic, doubling the dijon or use a quarter cup of goat cheese in the place of parmesan cheese.
  • You can use refrigerated tortellini in the place of frozen tortellini. But add in a half cup more of broth and pressure cook for 5 minutes on low pressure.

Description

Tortellini with Italian sausage, roasted tomatoes, spinach and parmesan cheese made in the Instant Pot. An anything but boring dinner!


Ingredients

Scale
  • 8 oz cherry or grape tomatoes
  • 2 tsp olive oil
  • Kosher salt and pepper
  • 8 oz ground Italian sausage (I used mild)
  • 1 Tbsp dried minced onion
  • 1 Tbsp minced garlic
  • 1 cup chicken broth
  • 2 tsp balsamic vinegar
  • 1/4 tsp dried rosemary leaves
  • 1/4 tsp dried sage
  • 1/4 tsp dried thyme leaves
  • Pinch of red pepper flakes
  • 1 tsp Dijon mustard
  • 1 (19 oz) bag frozen tortellini
  • 2 cups fresh or frozen spinach
  • 1/2 cup shredded parmesan cheese

Instructions

    Bueno as given as presented. I axed the red pepper flakes and used spicy Italian links, uncased and crumbled instead of ground sausage as it’s something I seem to always on hand. Added a little bump of Balsamic to my plate to amp the flavor.. I did use shredded Parm on this pot, but I am intrigued at the prospect of using “goàt cheese” the next time. Would crumbled Manchego overpower the overall balance of flavors? should I use a little less or just half and half it with the Parm?

    Question. My husband won’t eat spinach. Many recipes on your site use that ingredient. Any substitutions. Thank you. I do get many inspirations from you.
