Description
Tortellini with Italian sausage, roasted tomatoes, spinach and parmesan cheese made in the Instant Pot. An anything but boring dinner!
Ingredients

- 8 oz cherry or grape tomatoes
- 2 tsp olive oil
- Kosher salt and pepper
- 8 oz ground Italian sausage (I used mild)
- 1 Tbsp dried minced onion
- 1 Tbsp minced garlic
- 1 cup chicken broth
- 2 tsp balsamic vinegar
- 1/4 tsp dried rosemary leaves
- 1/4 tsp dried sage
- 1/4 tsp dried thyme leaves
- Pinch of red pepper flakes
- 1 tsp Dijon mustard
- 1 (19 oz) bag frozen tortellini
- 2 cups fresh or frozen spinach
- 1/2 cup shredded parmesan cheese
Instructions
- Preheat oven to 400 degrees. Slice the tomatoes in half and place a baking sheet. Drizzle the tomatoes with the olive oil and sprinkle with a pinch of salt and pepper. Roast in the oven for 20 minutes.
- Meanwhile, turn Instant Pot to saute setting. When display says HOT add in the Italian sausage and break it up. Add in the onion. Brown for 4 minutes. Stir in the garlic and saute for 1 minute.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Stir in the vinegar, rosemary, sage, thyme, red pepper and dijon. Add in the tortellini.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes on LOW pressure. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir in spinach, cheese and the roasted tomatoes.
- Serve and enjoy!
