Description

An easy Instant Pot recipe with ground beef, potatoes, corn, bacon and lots of flavor!


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp minced dried onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/8 tsp smoked paprika
  • 1 cup beef broth
  • 1 1/2 pounds Russet potatoes, peeled and cut into 1/2 inch cubes
  • 1 Tbsp Worcestershire sauce
  • 4 ounces cream cheese
  • 1 cup frozen sweet corn
  • 1/2 cup bacon crumbles

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, salt, pepper, garlic powder and smoked paprika. Brown for about 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Evenly add potatoes on top of the beef. Drizzle the Worcestershire sauce over the potatoes. Sprinkle the potatoes with a pinch of kosher salt. Place cream cheese and corn on top of potatoes. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 3 minutes and then move valve to venting. Remove the lid.
  5. Stir in the bacon. Salt and pepper to taste. 
  6. Serve topped with a bit of shredded cheese, if desired.
