Sorry Charlie Casserole–a one pot Instant Pot tuna and wild rice dish with sour cream, cheddar, and almonds for a quick weeknight meal.

Sorry Charlie Casserole
Today’s recipe takes only 5 minutes to prepare! It’s so easy. It calls for easy, pantry-friendly ingredients too. This could be an easy lunch as well.
Do you remember??? The phrase “Sorry, Charlie” comes from a long-running advertising campaign for StarKist Tuna in the United States, starting in the 1960s. In the commercials, Charlie the Tuna, a cartoon character with a beret and glasses, desperately tries to show that he has “good taste” so StarKist will choose him. But each time, a voice says, “Sorry, Charlie,” and rejects him, explaining that StarKist doesn’t want tuna with good taste—they want tuna that tastes good.
Ingredients/Substitution Ideas
- Water
- Rice-A-Roni Long Grain and Wild Rice with seasoning packet
- Albacore tuna–or canned chicken, rotisserie chicken
- Sour cream–or mayo, plain greek yogurt
- Cheddar–I like sharp
- Sliced almonds
Steps
Pour water into Instant Pot. Sprinkle in the Rice-a-Roni. Add in the tuna and the seasoning packet.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream. Sprinkle the cheese and almonds on top. Serve and enjoy!

Notes/Tips
- Serve with steamed green beans.
- This recipe can be gluten free if you replace the Rice-A-Roni with a certified gluten-free wild rice blend.
- Try stirring in a handful of frozen peas or chopped spinach after pressure cooking.
- Toast the almonds beforehand for more crunch and a nutty boost.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- This recipe is easy to double. Double ingredients and keep cooking time the same.
- Store leftovers in an airtight container* in the refrigerator for up to 3 days or in the freezer for up to 3 months.
- Other recipes you can make with sour cream are Instant Pot Meatball Stroganoff and Joy’s Casserole.

Is there some way I can receive only slow cooker recipes? Sifting through the instant pot recipes, all the ads and the recipes with odd names that have nothing to do with what they are, trying to find the slow cooker recipes is wearing down my patience more and more. I really don’t want to unsubscribe because I really like your recipes, but frustration is driving me in that direction. If there’s a better way this can be handled, I’d really like to know about it. Thank you.
