Joy’s Casserole–an easy and flavorful Instant Pot dish with tender chicken, creamy arborio rice and a punch of salsa verde and spices, all topped with melty cheddar cheese.

Joy’s Casserole
Today’s recipe is so yummy! Greg and I ate the entire pot by ourselves. It has lots of flavor thanks to the generous seasonings and salsa verde. The arborio rice adds a creamy element and using rotisserie chicken from Costco was so convenient. I made a small batch but you can easily double this recipe if you’re needing to feed more than 3 people. (Recipe adapted from Joy in the Kitchen).
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Onion–yellow or white
- Chicken broth–or water and Better than Bouillon chicken base
- Arborio rice–makes the dish nice and creamy, I buy this in the bulk section at winco
- Cooked chopped chicken or turkey–I used rotisserie
- Salsa verde–I used Herdez brand and it was mild
- Chili powder
- Cumin
- Smoked paprika
- Garlic powder
- Kosher salt
- Black pepper
- Sour cream
- Cheddar cheese–or mexican blend
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and saute until soft, about 4 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the rice. Dump in the chicken/turkey, salsa verde, chili powder, cumin, smoked paprika, garlic powder, salt and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move the valve to venting. Remove the lid.

Stir in the sour cream.


Sprinkle on the cheese and let it melt. Serve and enjoy!

Notes/Tips
- Serve with a corn and black bean salad with red onion, cilantro, and a squeeze of lime. A side of tortilla chips goes well with this dish also.
- This recipe is gluten free.
- You can also use raw chicken. Use 1 pound of boneless skinless chicken thighs or breasts cut into ½ inch cubes. Use the same cooking time.
- I made a small batch, but you can easily double this recipe. Double the ingredients and keep the cooking time the same.
- Use pepper jack or a Mexican cheese blend instead of cheddar for a spicier kick.
- It makes great burrito filling or can be rolled up into enchiladas for a second-day makeover.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Karen, would it be possible to substitute orzo for the arborio rice? If so, any change in timing?

yum! yes you can do that. 4 ounces of pasta (around 2/3 cup) needs 1 cup of broth. Pressure cook for 1 minute with a 5 minute release.
