Smiley Face Casserole

If you’re feeling blue you need to make this for dinner! It will cheer you up in no time. As you stare at 10 smiley faces looking your way you won’t stay sad for long 🙂 I thought this dish was so cute and not to mention delicious! The chicken filling has bacon, ranch dressing mix, cream cheese, sour cream and cheddar…yum! Make this for your family soon. You could even get creative with the faces and try out some common emojis…😮🙃😗 Enjoy!

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–or chicken breasts
  • Hidden Valley dry ranch dressing mix–I buy the big container at Costco
  • Cream cheese
  • Sour cream
  • Bacon crumbles–or you can fry up some bacon and crumble it
  • Sharp cheddar cheese
  • Chives–I used freeze dried
  • Refrigerated biscuits–it’s the smaller pillsbury container

Steps

Preheat oven to 350 degrees. Trim excess fat off of the chicken thighs. Cut the chicken thighs into small bite size pieces. Place the chicken into a 8×8 inch baking dish. Stir in the ranch dressing mix and the cream cheese.

Bake for 30 minutes, stirring halfway through.

While the chicken is baking open up the biscuits and use a straw to poke holes in each biscuit to make eyes. Use a small paring knife to draw or cut out a smile. 

Stir the sour cream, bacon, cheese and chives in with the chicken.

The cream cheese will be melted and easily stirred in.

Place the biscuits on top. You may have to squeeze them in a little to fit.

Bump up the heat of the oven to 400 degrees and bake for 12-15 minutes, until biscuit tops are golden brown. 

Serve and enjoy!

Notes/Tips

  • Serve with mixed vegetables like green beans, peas, corn and carrots.
  • I used my pyrex 8×8 inch baking dish* to bake this casserole.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. Biscuits are best the first day.
  • Other recipes you can make with ranch dressing mix are Happy Place Casserole and Instant Pot Mashed Ranch Cauliflower.
  • If you have cooked chopped chicken on hand you can mix the chicken with ranch dressing mix, cream cheese, sour cream, bacon, cheddar and chives and add it into the baking dish. Bake at 350 for 15 minutes. Stir. Add biscuits on top and bake at 400 for 12-15 minutes.
  • Sometimes the 12 ounce package of refrigerated biscuits are harder to find than the 16 ounce container. If you have to buy the 16 ounce container you can bake the extra biscuits that don’t fit into the pan on the side. Or you can 1.5 x time chicken part of the recipe and bake in a 9×13 inch with the larger amount of biscuits on top.

Description

A casserole with a chicken bacon ranch cheddar filling and golden brown smiley face biscuits on top. 


Ingredients

Notes

If you want more chicken filling then make 1 ½ times the chicken portion of the recipe. You may need to use a larger baking dish.
