Description

A casserole with a chicken bacon ranch cheddar filling and golden brown smiley face biscuits on top. 


Ingredients

Scale
  • 1 pound boneless skinless chicken thighs
  • 2 Tbsp Hidden Valley dry ranch dressing mix
  • 2 ounces cream cheese, cut into cubes
  • 1/4 cup sour cream
  • 1/4 cup bacon crumbles
  • 1/2 cup shredded sharp cheddar cheese
  • 2 Tbsp chopped chives
  • 1 (12 oz) package refrigerated biscuits

Instructions

  1. Preheat oven to 350 degrees. Trim excess fat off of the chicken thighs. Cut the chicken thighs into small bite size pieces. Place the chicken into a 8×8 inch baking dish. Stir in the ranch dressing mix and the cream cheese.
  2. Bake for 30 minutes, stirring halfway through.
  3. While the chicken is baking open up the biscuits and use a straw to poke holes in each biscuit to make eyes. Use a small paring knife to draw or cut out a smile. 
  4. Stir the sour cream, bacon, cheese and chives in with the chicken. The cream cheese will be melted and easily stirred in. Place the biscuits on top. You may have to squeeze them in a little to fit.
  5. Bump up the heat of the oven to 400 degrees and bake for 12-15 minutes, until biscuit tops are golden brown. 
  6. Serve and enjoy!

Notes

If you want more chicken filling then make 1 ½ times the chicken portion of the recipe. You may need to use a larger baking dish.
