Slow Cooker Creamy Tortellini, Spinach and Chicken Soup
You guys, this is a soup that you absolutely have to try. It is so super good. For reals! You are going to love it. It’s like a creamy tomato soup with cheesy tortellini and chicken and then a pop of color from the bright green spinach.
My kids both died over this soup and we were all sad when there was none left. It has loads of flavor and comfort. No need to make a roux on the stove top at the end of cooking time, the flour is added at the beginning to give the soup a creamy, thick consistency without dirtying extra pans.

Description
A creamy tomato soup with cheesy tortellini and chicken and then a pop of color from the bright green spinach.
Ingredients
- 1 medium yellow onion, diced
- 1/3 cup all purpose flour
- 1 Tbsp dried basil
- 2 cloves of garlic, minced
- 2 Tbsp tomato paste
- 3 Tbsp olive oil
- 4 cups chicken broth
- 2 (14.5 oz) cans petite diced tomatoes
- 1 to 1 1/2 lbs boneless, skinless chicken thighs
- 1 tsp salt
- 1/2 tsp pepper
- 4 cups frozen cheese tortellini (or you can use fresh)
- 3 cups packed spinach (you can definitely add more than this if you want)
- 1/2 cup Parmesan cheese
- 1 cup heavy cream or 1 cup half and half
Instructions
- In a microwave-safe bowl add the onions, flour, basil, garlic, tomato paste and drizzle with olive oil. Microwave for 5 minutes, stirring every 90 seconds or so. (The mixture will be pasty and look weird but don’t worry it will all be okay in the end). Add the mixture to the slow cooker*.
- Add broth, tomatoes, chicken, salt and pepper to the slow cooker. Stir.
- Cover and cook on LOW for 4-6 hours or on HIGH for 3-4 hours (or until chicken is very tender).
- Remove the lid use a fork to remove the chicken out of the slow cooker. And add in tortellini and spinach, Parmesan cheese and warmed cream (cream should be warmed because it may cause curdling if added in cold).
- On a cutting board, shred or cut the chicken into bite-size pieces. Add the chicken back into the slow cooker. Put the lid back on and cook on HIGH for about 10 more minutes, or until the tortellini are cooked through. Ladle into serving bowls and enjoy!

I made this soup for friends after we met up for a long run in during a sub zero wind chill day. They loved it and ate almost all of it, and I had to make copies of the recipe for everyone after. My kids and husband love it too. This will definitely be a regular winter meal. I added shredded carrots and subbed frozen kale for spinach but otherwise stuck to the recipe.

Yes, you could do that. I would brown it in a pan on the stove in a little oil. Slice it. Then add it into the pot when you would have added the chicken.

So bland and disappointing! I saw this recipe everywhere but I guess it’s one of those things that’s famous for being famous. Anyway, a couple of things that didn’t work out and could easily be done differently:
1. the fake roux in the microwave doesn’t work well at all. If you want a thickener, use cornstarch/cornflour, which will mix into cold water. No need for the microwave.
2. shredding the chicken isn’t good for a soup as you’re left with stringy bits of chicken. Cutting is much better.

French Lentils or brown lentils if you can find them. Green lentils will fall apart too much. Lentils are a great substitute for meats in a soup!

I have made this recipe several times and we love it. I make a stove top version in which I sear the chicken, and sautee the onion, then garlic, and then the basil. Next, I add the flour and stir for a bit. Then add all the liquids except for the cream and cheese. I add the chicken back to it, and cook for about 20-30 Mins on med-slow heat. I wouldn’t do the first step. Just stir everything into the slow cooker. Cover and cook on high for 2 hours, or until pasta is cooked through.

The soup was good, not great. A couple of notes – if you cut up the chicken before adding it in the first place, you don’t need to fish it out and do it later. Cleaner, and it cooks quicker. Second, microwaving the roux is unnecessary. Just stir the flour into the onion/garlic/tomato paste mix, it doesn’t need pre-cooking. Otherwise good instructions.

Smells divine but its disappointing as it lacks depth of flavor. I used no salt chicken broth. Stock or bone broth would have been better. I also cooked the tortellini separately and place it in the bowl and topped with broth so the pasta would not absorb call the liquid. Its OK but nothing special.

I was planning on making it and did a calculation of the calories based on the ingredients listed. It’s not a high calorie soup, but it clocks in at around 450 calories, not 256. It’s still a lovely dinner, but if you could update the calorie count it would be more helpful for people who are measuring their intake.

I’ve made the Creamy tortellini soup and loved it. I’m making it again, but I’m interested in trying with frozen chopped spinach instead of fresh. Do you recommend thawing and squeezing out excess water or just adding frozen. I don’t want soup to be watered down, but also am picky about the stems on fresh spinach. The spinach can be fresh or frozen. I usually use fresh.
You use the entire can, don’t drain the tomatoes.

Hello Karen…my son told me of this recipe…and I’ve never tried it. I decided to make it for our ladies Bible study group this Sunday. I’m a bit apprehensive to make it for them since I’ve never tried it. I’ve read all of the wonderful comments and it sounds like a slam dunk recipe. I do have a couple of questions before I make it. In the ingredient list it talks of 3 cups of packed spinach…we are talking of fresh spinach right?
Also, in regards to the cheese tortellini…I didn’t buy frozen, but instead bought the one in the Deli section of my grocery store…and now I’m a bit worried as to how it will taste and work out in this recipe. I’m sure it won’t take as long to heat thru. Do you think I should have bought the frozen?

Hi Sandra, the spinach can really be added to taste, whether it’s packed or loosely packed it will be just fine. As for the fresh tortellini you bought that will work. It actually may take longer than the frozen in my experience. But that’s okay it will still work! Have a fun bible group.

Delicious! The flavors of the broth were amazing. I substituted chopped kale because I can’t stand spinach. As leftovers it still tastes okay, but the tortellini falls apart and gets a mushy.

Nevermind. I just did it as the recipe stated, despite my dislike if microwaving. The only changes I made was italian sausage instead of chicken, added more spinach and used diced tomatoes with roasted garlic as other comnentors suggested. It came out absolutely fabulous! My only disappointment was no leftovers, everyone gobbled it up! This one is a keeper!

I just made this & pureed the whole soup with an immersion blender after removing the chicken to shred it. I did for the same reason; my hubby doesn’t like chunky tomatoes. Worked really well. Just put the shredded chicken, cheese & spinach in after blending. I also used a can of coconut milk, instead of cream, which was nice with these flavors.

Hi Sherry, I would cook it on the stovetop at the end of the slow cooker cooking time. Drain it and stir it into the pot. If you think you’ll have lots of leftovers then I would just drain off the tortellini and add it into each bowl of soup. Then keep the tortellini separate from the soup in the fridge. That way the tortellini won’t get all bloated and suck up all the broth of the soup.

Possibly the best soup I’ve had.
I’ve made this probably 7-8 times now and each time it is just amazing. Amazing. It’s a fairly simple recipe, but is packed with taste!
Something I’ve had an issue with is what to do with the leftovers. I’ve noticed that the leftovers turn a little goopy with the chicken just shredding apart and turns thick almost like a gumbo.
Any advice?
I only put in enough pasta for what I think will feed everyone and then add to the leftovers later.
And seriously, it’s amazing!

Cold day today and perfect for this soup, but I didn’t want to wait 4 or 5 hours for it to cook in the slow cooker so I made it in my Dutch oven. Followed the directions exactly, but slow simmered it stove top for one and a half hours. Then added the spinach, Parmesan cheese and cream. It was absolutely out of this world!
I don’t think the cooking method changed anything except possibly to evaporate some of the liquid and give the broth a more intense and delicious flavor. This is definitely a keeper.

You’d probably be just fine to keep the recipe as in. I prefer the juicier chicken thighs but that’s just a matter of preference. Breasts do tend to get dried out quicker but since they will be completely surrounded by liquid they’ll be okay I’m sure.

Hi, so I’m new to your site, found this recipe on pinterest of course. I wanted to just comment on where the sharing link buttons are on the page for a tablet. Where they are (on the middle far left side of the page) very much impedes the ability to not only read the recipe without scrolling up and down several times, but I’m noticing it makes it difficult to type this comment as well. Made it for dinner tonight, it was tasty and rich (maybe too rich). Some in the family liked it and some not. Used frozen tortelini and extra fresh spinach. Definitely more than 8 servings, though, and once I added the tortelini, they needed more than 10 minutes to cook, more like 30 extra min. No problem with adding the cream . It was worth trying it all in all 🙂

This soup is amazing. I did the saute method for the base of the soup, used chicken breast and fresh tortellini. It took about 3 hrs 45 minutes on high with my crockpot. I work nights so I've been looking for dishes that I can eat off of for a few nights and this soup will definitely stay in my rotation this fall/winter.

Unless you are a huge fan of basil, you will want to cut the basil way back! I think this has potential to be really great, but the basil was way too strong for me. Of course, I am not a pesto fan at all. I also used Kale instead of spinach, which to me has a much milder flavor. I will make again with the basil adjustment. Thank you for posting this.

I made this on Saturday it was wonderful – so rich and delicious. My limited kitchen skills caused no problems. Thank you very much for sharing it.
In case it helps anyone else, I made the following small changes/substitutions without problems:
– used jarred minced garlic instead of fresh cloves
– used light cream since I was out of heavy cream (I warmed it before adding, and didn't notice any souring)
– used chicken breasts instead of thighs
– did step #1 in a skillet (as suggested in another comment), on medium heat until the onions looked a little clear
Next time I will definitely add more spinach! Thank you.
