Rizzo Casserole–an easy Instant Pot dinner with Italian sausage, pasta, tomato sauce, cheese and more!

Rizzo Casserole
This recipe is adapted from Rizzo Casserole on A Life From Scratch. My version is an Instant Pot take on the casserole and it turned out soooo yummy! My daughter and I were the only ones home for dinner and we loved it and kept eating more and more and more. The Italian sausage gives it so much flavor and the crushed tomatoes are my favorite because they are the perfect choice to go between chunky diced tomatoes and pureed tomato sauce. Of course you need a bit of cheese to just bring it all together. Try this easy dinner out soon!
Ingredients/Substitution Ideas
- Italian sausage–I used mild
- Onion–yellow, white
- Celery
- Chicken broth–or water and Better than Bouillon
- Rotini pasta–or another short cut pasta
- Garlic powder
- Italian seasoning
- Crushed tomatoes
- Green bell pepper–or another color of bell pepper
- Colby jack cheese–or italian shredded cheese blend
Steps
Turn Instant Pot to saute setting. When display says HOT add in the Italian sausage and break it up. Add in the onion and celery and brown for about 5 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rotini pasta, garlic powder and Italian seasoning. Dump the tomatoes and peppers on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir. Sprinkle the cheese on top and let it melt. Serve and enjoy!

Notes/Tips
- Serve with a green salad and garlic bread.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with green bell pepper are Instant Pot Poor Man’s Casserole and Instant Pot Sloppy Ottos.
- If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.
- This recipe makes a small-ish amount (about 3 good size servings) but if you’re looking to serve a larger group you can easily double the recipe by doubling the ingredients and keeping the cooking time the same.

I had to adjust for stove top cooking as I don’t have an Ista Pot and probably won’t ever. Watch my Mom blow up pressure cookers and just not my thing. It worked well and I will be adding more broth and maybe red wine next time.
