Quick Hoppin John Soup
Happy New Year! Hoppin’ John is a classic Southern dish made with black-eyed peas, rice, and some kind of pork, and it’s traditionally eaten on New Year’s Day for good luck and prosperity. It’s simple comfort food with a little symbolism baked in. Today’s recipe is taking some of the elements of hoppin’ john and putting them into soup form. This soup is SO fast and easy to make. It only has 5 main ingredients. I kept going back for more! It was yummy! Enjoy!
Ingredients/Substitution Ideas
- Ground Sausage–or Italian sausage. I used Jimmy Dean brand.
- Chicken Broth–or water and Better Than Bouillon chicken base
- Black Eyed Peas–or navy beans
- Diced Tomatoes–I like petite diced tomatoes. You can also use fire roasted tomatoes.
- Kosher Salt
- Black Pepper
- Ben’s Original Ready Rice (Long Grain and Wild)–if you want to use Ben’s long grain wild rice uncooked you can, however you’ll need to increase the broth by 2 more cups and pressure cook for 4 minutes instead of one minute.
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Brown for 5 minutes. Drain off excess grease.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Stir in the black eyed peas, tomatoes, salt and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 1 minute. When time is up let pot sit 5 minutes and then move valve to venting. Remove the lid.

Break up the rice and stir it in.


Ladle into bowls and serve.

Notes/Tips
- Serve with a slice of French bread or corn bread.
- Want more veggies? Try adding in a grated carrot and a ½ cup of diced celery. Add it in when you stir in the broth. You can also stir in some chopped collard greens (pressure cook from the beginning).
- This soup thickens as it sits. You can add a splash of broth when reheating if needed.
- I used my 3 quart Instant Pot*. You can also make this in a 4, 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 8 oz ground sausage
- 3 cups chicken broth
- 1 (15 oz) can black eyed peas, rinsed and drained
- 1 (14.5 oz) can diced tomatoes
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 (8.8 oz) package Ben’s original ready rice long grain and wild
Instructions
Instant Pot Instructions:
- Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Brown for 5 minutes. Drain off excess grease.

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the sausage and break it up. Brown for 5 minutes. Drain off excess grease. Transfer to slow cooker.
- Stir in the broth, black eyed peas, tomatoes, salt and pepper.
- Cover and cook on low for 2 hours.
- Break up the rice and stir it in. Cook on low for 30 more minutes.
- Ladle into bowls and serve.
