Divorce Soup

Divorce Soup

I got the idea for this recipe from Recipe Zazz, the author says it is “A play on Italian wedding soup, its country cousin.” With a bit of a southern flare this soup incorporates black eyed peas, cajun seasoning and collard greens. It’s quite delicious and doesn’t take a lot of work. No leftovers at our house!

Ingredients/Substitution Ideas

  • Bacon fat
  • Onion
  • Garlic
  • Chicken broth–or water and Better than Bouillon chicken base
  • Dried oregano
  • Red pepper flakes
  • Black pepper
  • Cajun seasoning (with salt)
  • Black eyed peas
  • Fire roasted tomatoes
  • Frozen Italian meatballs
  • Collard greens–or kale

Steps

Turn Instant Pot to saute setting. When display says HOT add in the bacon grease and onion and saute for 4 minutes. Stir in the garlic and saute for 30 seconds.

Pour in the broth. Scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the oregano, red pepper, pepper, cajun seasoning, black eyed peas, tomatoes, meatballs and greens.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Salt to taste. Ladle into bowls and serve.

  • I used my 6 quart Instant Pot*. You can also make this in a 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Other recipes you can make with cajun seasoning are cajun chicken pasta and Slow Cooker Cajun Sausage, Potatoes and Green Beans.

I made this today for New Year’s, with a couple of very minor tweaks (using homemade stock, adding in some bacon, and using steamed black eyed peas and “cruciferous crunch blend” from Trader Joe’s). It’s fantastic! Definitely adding it to my regular rotation, as long as I can get the black eyed peas for it

I’ll have to try that blend from Trader Joes!
