Pittsburgh Casserole
This recipe idea comes from Helga’s Pennsylvania Cooking. She takes the flavors from pierogis (moreish Polish dumplings filled with cheesy, creamy mashed potatoes served with a onion butter sauce) and makes it easier in a casserole. Of course, I make it even easier and make it in the Instant Pot. So my version probably doesn’t resemble the original recipe all that much but it sure tasted amazing! With pasta, potatoes and cream cheese you can’t really go wrong. My son who is a runner is loving all the carbs to fuel for his workouts.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Campanelle or reginettie–they look like little lasagna noodles, I found mine in the bulk section at Winco.
- Red potatoes
- Cream cheese
- Butter
- Onion powder
- Garlic powder
- Kosher salt
- Black pepper
- Dried parsley
- Cheddar cheese
- Bacon crumbles–I like to buy the big bag at Costco
- Milk
Steps
Pour broth into Instant Pot. Sprinkle in the pasta.

Add the potatoes over the noodles.

Dump the cream cheese and butter on top. Sprinkle in the onion powder, garlic powder, salt, pepper and parsley.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the cheese, bacon and milk.

Serve and enjoy!

Notes/Tips
- Serve with green beans, asparagus or another vegetable you love.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 cup chicken broth
- 4 ounces campanelle or reginettie (they look like little lasagna noodles)
- 20 ounces red potatoes, cut into 1/2 inch cubes
- 4 ounces cream cheese
- 1 Tbsp butter
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 Tbsp dried parsley
- 1/2 cup shredded cheddar cheese
- 1/2 cup bacon crumbles
- 1/2 cup milk
Instructions
- Pour broth into Instant Pot. Sprinkle in the pasta. Add the potatoes over the noodles. Dump the cream cheese and butter on top. Sprinkle in the onion powder, garlic powder, salt, pepper and parsley.
